Ingredients (makes 2 servings)

  • 1 small red onion, sliced (60 g/ 2.1 oz)
  • 2 cloves garlic, minced
  • 200 g Swiss chard or spinach (7.1 oz)
  • 1 tbsp unsalted butter (15 ml)
  • 1/3 cup heavy whipping cream (80 ml/ 2.7 fl oz)
  • 1 tbsp Dijon mustard (15 g/ 0.5 oz)
  • 1 cup grated Swiss (gruyere) cheese, grated (115 g/ 4 oz)
  • 4 large eggs
  • sea salt and pepper, to taste

Instructions

  1. Prepare all the ingredients you'll need. Slice the onion and mince the garlic. Grate the cheese. Roughly chop the chard (keep the stalks separate from the leaves).
    Note: You can use spinach instead of chard. Creamy Eggs with Gruyere Cheese
  2. Grease a large skillet with butter and cook the onion on medium-high until fragrant and lightly browned for 3-5 minutes. Add the minced garlic and cook for another 30 seconds.
  3. Add the chopped chard stalks and cook for another minute. Add the roughly chopped chard leaves and cook until wilted for 30 to 60 seconds. Creamy Eggs with Gruyere Cheese
  4. Pour in the cream and add the mustard. Add most of the grated cheese, reserving some for topping. Stir to combine and cook until it starts to simmer. Creamy Eggs with Gruyere Cheese

OK.  This is really good!  I have made this a couple days running and I love it!  It is simple, fast and the mustard cream sauce makes it feel indulgent.    I use my Guinea hen eggs, which are smaller than chicken's but also have a higher yolk/white ratio like a duck egg.  Thanks Martina!  Great recipe!

Thank you! I think that the Swiss cheese makes all the difference. I've tried it with cheddar and it was ok but Gruyere was much better 😊

Actually, I used a Merlot Asiago and it was also great!

Now that's a nice cheese!
