When cranberries are in season, you seriously need to make these easy Keto Cranberry Brie Toasts! It's such an easy festive keto recipe prepared in just 15 minutes.
I used my super simple 90 Second Keto Bread which I briefly toasted in the oven and then topped with sliced brie and my Sugar-Free Cranberry Sauce. If you're nut-free, make sure to check out my original 90 Second Keto Bread for easy nut-free swaps.
I served these for lunch but if you double or triple the batch, they will make the perfect appetiser for your Holiday table!

90 Second Keto Bread:

Instructions
- Preheat the oven to 200 °C/ 400 °F (fan assisted), or 220 °C/ 425 °F (conventional). Place all of the bread ingredients into a small bowl and mix well. (Instead of olive oil you can use melted ghee.) Mix until well combined.
- Lightly grease a ramekin, or like me find a square storage container. Pour the mixture into the container. Microwave on high for 90 seconds. Turn out and cool on a rack.
Note: If you don’t have a microwave, you can use the oven. Preheat to 175 °C/ 350 °F (fan assisted), or 195 °C/ 380 °F (conventional) and bake for 12-15 minutes or until cooked through.
- Cut in half widthwise to create two toasts and brush each with olive oil. Place on a baking tray and transfer into the oven. Cook for about 5 minutes or until golden.
- Remove from the oven and layer the sliced brie on top of each toast. Top with the the cranberry sauce and place back in the oven for another 5 to 10 minutes.
- Remove from the oven and optionally sprinkle with fresh thyme.
- Eat immediately.
