These mug muffins taste great and are ready in just a few minutes. The idea of adding pesto was rather accidental. I was making some Quick Keto McMuffins for breakfast and had a jar of pesto that I made a few days before. So I added a couple of tablespoons of pesto and the result was totally worth it!

Tips & Substitutions

If you need to make this recipe nut-free, use more flaxmeal (same amount) or coconut flour (half the amount).

When using ingredients, always go by their weight, especially in case of baked goods. Measures such as cups may vary depending on the brand.

If you don't have a microwave, I suggest you make 4-8 servings at once. Preheat the oven to 175 °C/ 350 °F (fan assisted), or 195 °C/ 380 °F (conventional) and cook for about 15 minutes or until cooked in the centre.

Ingredients (makes 2 servings)

Muffins:
Filling:
  • 2 tbsp cream cheese (30 g/ 1.1 oz)
  • 1/2 medium avocado, sliced (75 g/ 2.6 oz)
  • 4 slices crisped up Pancetta or bacon (60 g/ 2.1 oz)
  • Optional: sliced tomatoes or crispy greens to serve with

Instructions

  1. Place all the dry ingredients in a small bowl and combine well. Quick Pesto Mug Muffin
  2. Add the egg, cream, and mix well using a fork. Add a dash of water if it's too thick. Quick Pesto Mug Muffin
  3. Add the pesto. Combine well and place in two single-serving ramekins. Quick Pesto Mug Muffin
  4. Microwave on high for 60-90 seconds. Let the ramekins cool before filling. Cut the muffins in half. Spread cream cheese on both halves and top with sliced avocado and crisped up bacon slices. Enjoy!

Does the nutritional information include the filling? I do not eat pancetta, bacon or dairy, but I am trying to change my eating habits.  I would like to use this just as a bread as another commenter mentioned, so wanted to make sure I had an accurate count of carbs.

Omg! Since I found this recipe I rarely buy bread. I don't add pesto i just use all the other ingredients and it tastes like whole wheat bread. I love it!

Is the filling part on this recipe for 1 serving or the 2 servings.
This is one of my favourite breakfast recipe but I’m always wondering about the filling.

Yes, that should work too but it may be higher in carbs so I'd only use half (1 tablespoon per 2 muffins).
