Laurie's Keto Success Story

Everyone has a lowest point. I’ve hit mine many times throughout the years, each time me swearing I would do it this time and each time I would fail. At almost 30 years old, I have been struggling with my weight my entire life. I hit 200 lbs in 6th grade, at like 10 years old!

Growing up was hard and kids were mean. As an adult, I’ve tried so many different things so many different times and each one ends with me giving up. I had worked myself into a never ending downward spiral of depression about my health, my weight, and my looks. My highest weight ever was 350 lbs when I found out I was pregnant with my daughter, and while I had previously made it down to 300 a few times, I always seemed to get right back up there, I always seemed to give up. I got to a point where I just really gave up on it all for a few years, yo-yoing between 300 and 325, and just thought that this would be my life forever. I really had felt like I was a disappointment and not worth much of anything and I felt like I had failed my daughter. I did not want her growing up like I did and I wanted to be a healthy role model for her so badly, and I failed.

Then in April, that changed. See my one friend, who used to be my size, started a keto diet and had gotten down to her goal weight. I just watched the weight melt off of her and I wanted that for myself. So I started a low carb/keto diet on a complete whim!

When I started, I was 326.2 lbs and a size 24/26. Previously, I always felt like 300 lbs was a wall that I could never get past, but I finally did! I can proudly say that 3 months later, I am 267 lbs and I have lost 59.2 lbs! And overall I've lost 83 lbs. I’m now a weight that I haven’t been in 10 years. I can actually see this happening for me now, that I can be healthy and I can be there for myself and my daughter. I’ve still got a long way to go, but every day that distance gets smaller and smaller, and I can't wait! So bring on the challenge and let's see what I can do in another 3 months!

Why Did You Join?

Weight loss.

What Helped You Stay on Track?

The biggest thing that helped me to stay on track is the thought of failing. I've started and failed so many diets before and this was the time that I didn't want that to happen. I've been successfully doing keto since April and I've had such amazing results, that I just did not want to stop.

I really feel like keto is something I can do for the rest of my life because I really don't feel like I'm missing out on anything. I don't crave those carbs and sweets anymore because there are so many keto friendly alternatives.

The other big thing that's helped me to stay on track is my family. My husband especially! He is so super supportive of all of this and he's like my own personal cheerleader. When I'm feeling down about my loss being slow for a week or two, he'll remind me that I'm down over 100 lbs from my highest. When I don't feel like cooking, he'll Google a keto friendly recipe and make dinner. He's just been amazing. My daughter too, she'll go around and tell everyone I can't have sugar (she's 5 so that was the best way I could figure out how to explain it to her). She'll hug me and tell me I'm less squishy. She'll tell me I'm beautiful. All those things help.

How Has KetoDiet Helped?

How has the KetoDiet Challenge helped? Well, for starters, it's given me access to a support group that I didn't have the first 3 or so months of me doing this. Beforehand, I was kind of doing it alone with no one else. I felt alone. Now I have the wonderful group of people who have been so supportive! It's also helped me by challenging me.

I know that we got to set our own goals, but I set myself a goal of 30 lbs in the 90 days. And then I blew past that by getting to 40.4 lbs lost in the 90 days! The recipes have also helped. Me and my family got bored eating the same 5 things over and over again, so I was able to utilize the recipes on here to make things more interesting.

What Are Your Favourite KetoDiet Recipes?

Anything with cauliflower rice and zoodles in it were amazing. We purchased a spiralizer just for zoodles and we love it. We probably have zoodles 3x a week! And my daughter just loves using the Spiralizer and then eating the zoodles. One of my biggest fears is that she'll be obese like I was and this helps to alleviate that worry.

Also the Cheese Stuffed Portobello Mushrooms because mushroom and cheese are just made for each other. And just recently I've discovered the Low-Carb Philly Cheesesteak Salad. My family and I went to Philly a few weeks ago and they all had Philly cheesesteaks and I felt left out. Making this salad helped to satisfy that craving I was having.

And I've been meaning to try the Keto Eggplant Parmesan recipe because eggplant parm is probably my favorite Italian dish.

I changed the way I ate in 2011, when I was diagnosed with Hashimoto’s, an autoimmune disease that affects the thyroid. I had no energy, and I found it more and more difficult to maintain a healthy weight.

That’s when I decided to quit sugar, grains, and processed foods, and to start following a whole-foods-based ketogenic approach to food.
