People often ask what is my favourite keto-friendly treat. The first and easiest low-carb treat that comes in mind is a piece of 90% dark chocolate with a tablespoon of roasted almond butter. It may sound boring but it usually does the job.
The treat that I often make for my friends and family are no-bake cheesecake jars like these. They are delicious, easy and so versatile!
What I really like about these keto jars is that I can easily adjust the amount to make a large batch to serve more people. Apart from vanilla extract, lemon zest and berry jam, you can be creative and use cacao powder, melted chocolate, cinnamon or shredded coconut.
There is no crust in this keto dessert but you can easily add a layer of almond-coconut base like we did in these Keto Lemon Cheesecake Jars. I topped mine with my Strawberry & Basil Chia Jam but any low-carb jam will work just fine. You can even use fresh or frozen berries, melted chocolate or roasted coconut chips - the options are endless. If you are keeping your carb intake ultra low, skip the topping altogether.
As for the substitutions, full-fat cream cheese can be used instead of mascarpone, and sour cream or full-fat Greek yogurt can be used instead of creme fraiche. To make a dairy-free version, use coconut cream and coconut yogurt, or simply use just coconut cream and add a tablespoon of lemon juice.
I hope you enjoy this keto treat as much as I do. Let me know what your favourite topping is in the comments!
