I was so impressed when I first tasted keto “apple” butter (actually made from zucchini, though you would never know its not the real stuff!) that my mind instantly began to imagine all of the ways in which it could be enjoyed.

Even though this keto-friendly apple butter uses zucchini, it’s still quite sweet, so I was wanting to offset that a little by combining it with something a bit less sweet to balance it out, but creamy so that it still felt like a treat.

These low-carb apple streusel cheesecake parfaits were the perfect answer. You'll get all of the favour of your favourite fall inspired coffee cake combined with creamy cheesecake in simple singe-serve jars!

The apple butter is swirled through a creamy cheesecake mix, and layered with a crunchy streusel topping to create individual serves. Though the apple butter is sweet, there is a subtle tartness to the cheesecake mix from the yoghurt, so add a little stevia or your preferred low-carb sweetener to make this sweeter if you prefer.

Instructions

  1. Preheat oven to 160 °C/ 320 °F (conventional), or 140 °C/ 285 °F (fan assisted). For the streusel, add all ingredients and mix well. Note: It will take an additional 1 hour 45 minutes to prepare the Low-Carb Apple Butter. Keto Apple Streusel Cheesecake Jars
  2. Bake in oven 15-18 mins, until golden brown. Set aside and allow to cool completely in pan. Note that the streusel will feel soft when you first remove it from the oven, but will crisp up as it cools.

  3. To make the cheesecake mix, add the yoghurt, cream cheese, vanilla and stevia to a bowl and beat either by hand or in a mixer until combined. Gently fold through the low-carb "apple" butter so that its swirled through the cheesecake mix.

  4. To assemble, alternate streusel and the cheesecake mix, finishing with a sprinkle of streusel and/or some ground cinnamon.

  5. Best served straight away. Both the streusel and cheesecake mix can be made ahead of time. Store the cheesecake mix in the fridge for up to 4 days, and the streusel in a sealed container at room temperature up to a week.

Glad you liked it! 😊 EMR = Estimated Minimum Requirement = 2,000 mg. You can also go by AI = Adequate Intake but it may be harder to hit your goals without paying close attention to your diet or supplementation. From Harvard:
For women 14-18 years of age, the AI is 2,300 mg daily; for women 19+, 2,600 mg. For pregnant and lactating women, the AI ranges from 2,500-2,900 depending on age. For men 14-18 years of age, the AI is 3,000 mg; for men 19+, 3,400 mg.

Hi Ana, you could use coconut cream instead of mascarpone and coconut yogurt instead of regular yogurt. Finally, you can use coconut oil instead of butter. I hope this helps!

I made the apple streusel cheesecake using jicama apple filling by ruled.me. For a half recipe I used 125 gms of the chunky filling that I puréed into the cream cheese and 50 gms in chunks for the topping.
We were in a hurry to eat the dessert so I put 1/4 of the cheesecake into a bowl topped with 1/4 of hot streusel and 1/2 of the chunks (which had been heated). It was so tasty.

1/2 what full fat Greek yogurt?

Thanks for that, it's 1/2 cup. Any full-fat Greek yogurt with at leat 5% fat or even 10% fat will work. The brand doesn't matter but make sure it's plain. I like Fage.
