Chia pudding is a breakfast favourite in my house! I make mine with whole chia seeds, which give it a characteristic grainy texture, but you can use ground seeds if you prefer your keto pudding smooth.

I love the combination of chocolate & orange so much that I used this popular combo in two recipes in my upcoming cookbook. When the book is released in January, you will find chocolate & orange keto granola and cookies!

As you may have noticed, this meal is relatively high in total carbs and low in net carbs. If you are not sure which of these you should count, have a look at my post here: Total Carbs or Net Carbs: What Really Counts?

The main reason I use two sweeteners in most of my recipes is that a combination of more sweeteners mask the aftertaste / bitterness of some of them. If the pudding is too thick, add 2-4 tbsp of water or almond milk.

Instructions

  1. Mix the chia seeds, coconut milk, water and Erythritol. If you prefer a smoother texture, use ground chia seeds (note: ground chia seeds may taste bitter). Chocolate Chip Orange Keto Chia Pudding
  2. Add fresh orange zest (or orange extract). Chocolate Chip Orange Keto Chia Pudding
  3. Add 5-10 drops of stevia. Chocolate Chip Orange Keto Chia Pudding
  4. Let it sit for at least 10-15 minutes, ideally overnight in the fridge. Just before serving, add chopped dark chocolate chips or grated dark chocolate. Don't leave the chocolate in the pudding overnight or it will get soft and will lose its flavour. Chocolate Chip Orange Keto Chia Pudding
  5. Optionally, top with whipped cream, orange zest and some grated dark chocolate. Enjoy! Store in the fridge for up to 3 days. Chocolate Chip Orange Keto Chia Pudding

I changed the way I ate in 2011, when I was diagnosed with Hashimoto’s, an autoimmune disease that affects the thyroid. I had no energy, and I found it more and more difficult to maintain a healthy weight.

That’s when I decided to quit sugar, grains, and processed foods, and to start following a whole-foods-based ketogenic approach to food.

Thank you Crystal! Could you, please, provide the details of that nutritionist? You can send it via ketodietapp.com/Blog/contact. I have not agreed to anything like that and I don't like the fact that someone is charging for my recipes when they are free. Thank you!

Made this and the eggnog mug cake for the first time!  I never have eaten chia seeds but my daughter loves them so I made this recipe last night and had it ready for her this morning.  She could only eat half of it so I tried the other half.  I am hooked!  The orange zest and 85% chocolate is the most amazing combination on the planet!  Genius Martina!
