These low-carb cheeseburger cups need to come with a public safety warning. Hoooooly moly, they are so good! Imagine every single little wonderful thing about a cheeseburger, then take off the bun.

Beefy. Cheesy. Tangy. Moreish.

These keto cups tick every single box. AND they clock in at under 3 grams of net carbs! I made mine using oversized muffin tins, so if you have standard muffing tins, you could make even more.

You can have these made and on the table in just over half an hour and they make perfect lunchbox fillers too. Enjoy!

Ingredients (makes 10 cups)

  • 12 thin-cut bacon slices (300 g/ 10.6 oz)
  • 500 g minced beef (1.1 lb)
  • 1 small brown onion, chopped finely (70 g/ 2.5 oz)
  • 1 tsp garlic powder
  • 1/2 cup sugar-free tomato sauce (120 ml/ 4 fl oz)
  • 1/2 cup full-fat cream cheese (120 g/ 4.2 oz)
  • 6 tbsp sugar-free tomato ketchup (90 g/ 3.2 oz) - you can make your own ketchup
  • 6 tsp American mustard or Dijon mustard
  • 1 cup grated cheddar cheese (113 g/ 4 oz)
  • 1/3 cup sliced pickles (52 g/ 1.8 oz)

Instructions

  1. Preheat the oven to 220 °C/ 430 °F (fan assisted), or 240 °C/ 465 °F (conventional). I sprayed my muffins tins lightly with olive oil. I don’t think this is essential but didn’t want my bacon to stick.

  2. Cut the bacon slices in half (I asked my delicatessen to slice mine half the usual thickness), and wrap them around the inside of the holes in the muffin pans, and then lay the excess across the bottom.
  3. Bake for 10 minutes and remove from oven. Leave oven turned on.

  4. While the bacon is cooking, brown the minced beef and onion in a frying pan, along with the garlic powder, until cooked.
  5. Add the cream cheese and tomato sauce (passata) and stir until melted and well combined.

  6. Spoon the mince mixture into each of the bacon cups and then top with tomato ketchup and mustard.

  7. Pile grated cheese on top and then bake for a further 12 minutes.

  8. Serve 2-3 cups with a pickle slice on top.

Will you please make your fantastic recipes easier to print?

Hi Rose, there is a "print recipe" option at the very top. I wonder if you are viewing this recipe via a browser or if you clicked from Facebook. Unfortunately, Facebook seems to be blocking certain functions on websites and in our case the "print recipe" is affected and may not work or display right. I suggest you open the recipe you want to print via a browser.
If you are viewing this recipe via the app, we are working on a compact print option. At this point all recipes viewed via the Blog (free version) are not compact. They are only compact via the Recipes section as this section works in a different way (subscribers only).

My bacon did not keep its shape in the muffin tin. It shrank enough when pre cooking it that it folded in some on itself. Is there a certain type of bacon or trick that works best? The taste was still great.

That can happen, it will depend on the fat content. The more fat, the more it usually curls. I'd say your best best would be to use more of it so when it shrinks it still "hugs" the muffin. You won't be eating all that bacon grease - it will stay in the muffin tin.

The "Print Recipe" button never works??  What am I doing wrong.  I wind up copying and pasting the recipe into another document to print it.  Very frustrating.  Do I need to change a setting?  I have no issue with any other blog using the "Print" button feature.

Hi Patricia, this seems to be a Facebook issue. We couldn't figure out why some of our users couldn't print recipes until we realised they all opened them from the Facebook app. You will need to open them in a border instead - that should work with no issues. We will try to fix this but it is frustrating since it's not something we broke on our side.

What about all the bacon grease? I made them and had bacon grease every where. Do I take some out at the 10 minute mark when the bacon comes out?

Yes, that will depend on the bacon you use (streaky/high-fat vs relatively lean). If it's swimming in fat then it's better to pour it out before adding the beef 😊

This recipe can also be made in a skillet add your cooked bacon and you can freeze them up in baking cups sprayed before adding cheese in the oven. Great Recipe
