Chocolate or vanilla? That's a tough one, at least for me! Sometimes, it's great to have both options. Coconut is technically a fruit, but it's low in carbs and great for the ketogenic diet. The addition of shredded coconut adds a great texture to this treat. If you want a flavour boost, try toasting it. You will find tips on how to toast coconut in my Keto Coconut Fat Bombs.

Tips & Substitutions

Too "eggy"? Although I like this combination, some of you may perceive it as too "eggy". You can try the following: use one egg, double all the dry ingredients and add 1/4 cup coconut milk, almond milk or cream. This mixture will make 2 mug cakes.

Instead of the listed sweeteners, you can try other healthy low-carb sweeteners from this list. The reason I'm using both Erythritol and stevia is to mask the aftertaste some of the sweeteners may have.

Egg-free version: Use 2 tbsp chia seed meal (16 g / 0.6 oz) instead of 1 egg + 1/4 cup coconut milk or heavy whipping cream + 1 tsp psyllium husk powder (5.7 g net carbs per mug cake).

Nut-free version: Use 1 heaping tablespoon of coconut flour instead of 2 tablespoons of almond flour. If you don't have coconut flour, you can use 2 tablespoons of finely shredded desiccated coconut instead.

If you don't have a microwave, I suggest you make 4-8 servings at once. Preheat the oven to 175 °C/ 350 °F (fan assisted), or 195 °C/ 380 °F (conventional) and cook for about 15 minutes or until cooked in the centre.

Instructions

  2. Add the egg, coconut oil and stevia and mix well using a fork. Microwave on high for 70-90 seconds.

  3. When done, you can optionally top the mug cake with whipped cream, sour cream or creamed coconut milk.

oh my, the BEST mug cake!! I finally adjusted to my microwave.  1st time I did 90 secs...way way to dry...next time I did 70 secs....still too dry....
I added 2 TBSP coconut oil instead  of 1
microwaved 60 secs and let it set a few minutes...always cooks  a little after taking from microwave

Just tried this today and absolutely loved it! I replaced 1 tbsp of shredded coconut with half a scoop of chocolate whey protein per serving and, for my husband, I added some milk chocolate chips (he's not as into keto as me ;-D). Oh my goodness, I made this last night with hand whipped cream (sweetened with a little Swerve and SweetLeaf Steviaclear drops and WOW. Heaven. Quick question about your nutrition facts...you took out the sugar alcohol carbs when calculating both the carb number and the net carb number? (I ask because 1 tsp of Swerve has 5g carbs, but they are 0 net since that's erythritol carbs...but that would technically make 30g of erythritol carbs alone for this recipe. When I first put the recipe into MFP to double check everything I freaked out because the total carbs were over 40g!!! Haha.) Just wanted to make sure I'm not missing something...as yesterday was my first time using Swerve and I'm still pretty new to keto cooking, etc.

Most food trackers use a "shared" database (database created by their users) that is full of errors and there is no easy way to make sure your macros are accurate (unless you specify all nutrition facts yourself). In our app, we use a verified database that we keep updating on a regular basis.
