How pretty do these look? They’re perfect for that special Valentine’s Day dinner for two. They are simple, yet spectacular and can be made well in advance so that you can stay at the table gazing into each others eyes instead of wasting time in the kitchen.

This delicate berry flavoured panna cotta is creamy and delicious — perfect for spoon-feeding to your loved one. Enjoy!

How to Make Keto Panna Cotta

You will only need 5 ingredients to make this deliciously creamy keto treat. We used just a little sweetener so feel free to add more, or skip altogether if you prefer your keto dessert sweetener-free.

This low-carb panna cotta can also be made dairy-free if you use coconut milk instead of cream. If you don't have gelatin powder, you can use gelatin sheets instead.

Initially, we made two servings using the ingredients below but the panna cotta was too filling and the serving size was too large, so we ended up with four dessert servings. If you only want to make two servings for your Valentine's Day menu, simply halve the recipe and follow the same steps.

Ingredients (makes 4 servings)

  • 2 cups heavy whipping cream or coconut milk (480 ml/ 16 fl oz)
  • 2 tbsp Erythritol or Swerve (20 g/ 0.7 oz), or to taste
  • 1 cup fresh raspberries (123 g/ 4.3 oz)
  • 2 tsp gelatin powder or 2 gelatin sheets
  • 3 tbsp very cold water (45 ml)
  • Optional: fresh raspberries and mint for topping

Instructions

  1. Prepare all the ingredients.

  2. Puree the raspberries and then pass through a sieve to remove the seeds. discard the seeds Romantic Raspberry Panna Cotta
  3. Heat the cream and sweetener in a saucepan until barely simmering, stirring the whole time. Once the sweetener has dissolved, remove the pan from the heat and stir in the raspberry puree.
  4. Sprinkle the gelatin powder over the cold water in a small bowl and allow it to bloom for 3-5 minutes. Spoon the gelatin into the hot cream and stir until completely dissolved.

  5. Lightly oil two panna cotta moulds or tilt four stemless wineglasses on a tray the create the desired effect. Pour the mixture in to your prepared moulds.

  6. Refrigerate for 2 to 4 hours, until set.

  7. Serve with extra fresh raspberries. This sugar-free panna cotta can be covered with a cling film and stored in the fridge for up to 4 days. Fresh raspberries may not last for that long so add them just before serving. Romantic Raspberry Panna Cotta

Hi, will pectin work the same way as gelatin in this recipe?

Hi Archie, I don't think it will. You could try agar powder instead - if you're looking for a vegetarian option.
