These Keto Key Lime Pie Fat Bombs are a perfect way to add a hit of fat to your day all while soothing your sweet tooth.

They’re almost like a low-carb cheesecake but a bit more solid thanks to the coconut butter. A sprinkle of matcha green tea powder on top plays to the green theme for the limes but it’s totally optional. I love the chunks of cacao butter in these too, like little gems of white chocolate!

Heads up that these fat bombs will melt so be sure to store them in the refrigerator until ready to serve. You can even freeze these sugar-free treats so you don't have to worry about eating too many of them. Remember, eating too many treats can be counterproductive for fat loss!

Ingredients (makes 10 servings)

  • 1 cup full-fat cream cheese, softened to room temperature (240 g/ 8.5 oz)
  • 1/2 cup coconut butter (125 g/ 4.4 oz) - you can make your own
  • 1/4 cup virgin coconut oil (60 ml/ 2 fl oz)
  • 1/4 cup cacao butter, chopped into small pieces (55 g/ 1.9 oz)
  • 1/4 cup powdered Swerve or Erythritol (40 g/ 1.4 oz)
  • 1/4 cup key lime juice (60 ml/ 2 fl oz)
  • 1-2 tbsp finely grated key lime zest
  • Optional: 1 tsp matcha powder, for topping

Instructions

  1. Mix all of the ingredients except for the matcha powder in a large bowl until fully combined.
  2. Divide into 10 equal sized balls (about 58 g/ 2 oz each) and place on a parchment lined baking sheet.

  3. Transfer to the freezer for 30 minutes to set before topping with matcha if desired.

I was super excited to make these. I have never used cacao butter before… but had everything else on hand. I went ahead and got some… i wish I hadn’t!
I have loved all your recipes but the cacao butter had a strong taste and a strong smell that I just could not get past. I am guessing it’s just me: I tend to be very sensitive to smells.
So - I remade them, replacing the cocao butter with homemade coconut butter… these turned out amazing and I will make them again and again this way!

Hi Dawn, I'm sorry it seems that your comment got trapped in a filter! I think you're right that for some people it is a bit too strong tasting. I'd probably go with coconut butter just to be safe. Thank you for your feedback!

These are Ahhhmazing!!! I took the time to make my own coconut butter which is taking its place next to my other nut butters as a staple. I didn’t have cacao butter and used real butter as sub, looking forward to the cacao but at this point not missing it...the flavor of these is wonderful! Will be making again! Keto for life ladies!
