This crunchy slaw is packed full of flavor and perfect for summer! We've got crunchy kohlrabi, carrot and celery covered in creamy avocado oil mayonnaise flavored with lemon, mustard and horseradish.

Don't have kohlrabi? You can use peeled broccoli stalks sliced into matchsticks! It will taste just like kohlrabi and you won't be wasting any broccoli stalks.

You can serve this slaw just like regular Coleslaw — with grilled meat, fish, seafood or even some grilled cheese such as halloumi. It will be a great side option for any garden barbecues!!

Ingredients (makes 5 side servings)

  • 2 kohlrabi (350 g/ 12.4 oz)
  • 1 large carrot (72 g/ 2.5 oz)
  • 3 medium celery stalks (120 g/ 4.2 oz)
  • 3/4 cup avocado oil mayonnaise or other paleo mayonnaise (165 g/ 5.8 oz)
  • 1 tbsp lemon juice (15 ml)
  • 1 tbsp wholegrain mustard or Dijon mustard (15 g/ 0.5 oz)
  • 1 tbsp prepared horseradish or freshly grated horseradish (15 g/ 0.5 oz)
  • 1/2 cup chopped parsley (15 g/ 0.5 oz)
  • sea salt and pepper, to taste

Instructions

  1. Peel the kohlrabi and carrot. Grate the carrot using the large holes on your grater. Slice the celery stalks. Slice the kohlrabi and then cut the slices into matchsticks. Crunchy Kohlrabi Slaw
  2. Place the vegetables in a mixing bowl and add the mayonnaise, lemon juice, wholegrain mustard (or Dijon mustard), prepared horseradish (or grated fresh horseradish), chopped parsley, salt and pepper. Crunchy Kohlrabi Slaw
