Crunchy Kohlrabi Slaw


Step 1Peel the kohlrabi and carrot. Grate the carrot using the large holes on your grater. Slice the celery stalks. Slice the kohlrabi and then cut the slices into matchsticks.

Step 2Place the vegetables in a mixing bowl and add the mayonnaise, lemon juice, wholegrain mustard (or Dijon mustard), prepared horseradish (or grated fresh horseradish), chopped parsley, salt and pepper.

Step 3Mix to combine and serve. Store in the fridge for up to 3 days. This salad tastes even better the next day!
