Unless you are a vegetarian, meat is a great source of healthy protein and fat. Cajun Chicken Tacos are high in potassium (~ 40% RDA of potassium) and very low in carbs. I love this super easy recipe that takes less than half an hour to prepare. You don't need any special ingredients and they're great for garden parties!

If you've never tried using lettuce instead of high-carb tortillas, you definitely have to try this recipe!

Ingredients (makes 2 servings)

  • 1 package chicken thighs, skinned, boneless (400 g/ 14.1 oz)
  • 1/2 medium red onion (50 g/ 1.8 oz)
  • 1/2 lime, juiced
  • 2 cloves garlic
  • 1 tbsp fresh thyme or 1/2 tsp dried thyme)
  • 1 tbsp fresh oregano or 1/2 tsp dried oregano)
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 2 tbsp ghee or butter
  • 1/4 cup heavy whipping cream or coconut milk (60 ml/ 2 fl oz)
  • salt and pepper, to taste
  • 2 heads small lettuce (200 g/ 7.1 oz)

Instructions

  1. Peel, halve and finely chop the onion, mash the garlic and chop the herbs (if you are using fresh herbs). Low-Carb Cajun Chicken Tacos
  2. Dice the chicken thighs, mix with garlic, herbs, paprika, cayenne and black pepper and season with salt. Squeeze in the lime juice. I prefer using chicken thighs to breast filets. They are a lot juicier and tender! Low-Carb Cajun Chicken Tacos
  3. Heat a large skillet, add ghee or butter and cook the onion over medium heat until it becomes soft and golden. Low-Carb Cajun Chicken Tacos
  4. Add the herbed chicken pieces and cook for about 10 minutes or until done.

  5. Keep on medium heat, add the cream and let it cook for another 2-3 minutes while stirring frequently. When done, set aside. Low-Carb Cajun Chicken Tacos
  6. Wash the lettuce (I used Little Gem lettuce) and place in a salad spinner or drain using a paper towel. Spoon the meat mixture on top of each leaf and enjoy! :-) Low-Carb Cajun Chicken Tacos

What would be the macros if I don't use lettuce.  Prefer to mix it with spinach or cauliflower if I have it around

The macros would be almost the same. The only thing that lettuce does is that it adds carbs and fibre. So that would be about 7.5 g total carbs and ~ 6 g net carbs.

I am sorry if I sound stupid, but how do you get the servings?  How many of these lettuce tacos is a serving?

Hi Sophie, I just divided the whole batch into 2 servings - you can have as many lettuce leaves as you like - it won't make a difference as they are very low in carbs and calories. Hope this helps!

Where this carbs are coming from ?

Hi Zrinka, most carbs are from the vegetables and cream and some from the spices.

Made the Cajun Chicken Tacos tonight for myself and a friend and I have to say, BEST CHICKEN DISH I have had in a long time. I was wondering if the amount of spices would be enough for the chicken. I let the chicken sit in the spices (after mixing it well) while I cooked the onions, and I have to say it was spot on! Definitely making this dish again and again! I also made the keto tortillas to go with it and they were great 😊 Kitchen Vixxen

Yummmmmy! Excited to make this! Do you eat 1 serving of this for the dinner of your 3 meals on day 3 of your clean eating plan? Seems as though just this one serving with nothin else would fill me enough, especially with no snack between lunch & dinner. Thanks! 😊

Thank you Trish! That's totally up to you. You can have as many meals as you need, it's all about satiety and not. I mostly eat twice a day (servings such as this meal) and sometimes have 1-2 small snacks in between. Hope this helps! 😊
