These 5-ingredient keto breakfast pockets are filled with ham and melty cheese. They're easy to prepare, nut-free, grain-free and egg-free and can be prepared in under 30 minutes.

Just like my Keto Spanakopita, this recipe is adapted from Keto Morning Hot Pockets which went viral over the social media. If you can eat nuts, you can follow the original recipe that is made with almond flour - you will only need 4 ingredients: shredded mozzarella, almond flour, ham and cheese - that's it!

Ingredients (makes 2 servings)

  • ¾ cup shredded mozzarella (85 g/ 3 oz) - use low-moisture, part-skim, shredded mozzarella cheese; not fresh mozzarella.
  • 1 heaped tbsp cream cheese (30 g/ 1 oz)
  • 4 tbsp flax meal (28 g/ 1 oz)
  • 85 g quality ham (3 oz )
  • 85 g slices provolone cheese (3 oz) - you can use any cheese you like: cheddar, smoked mozzarella, etc.

Instructions

  1. Prepare the dough: melt the shredded mozzarella and cream cheese in a microwave oven for 1 minute, checking half way through. 5-Ingredient Keto Ham & Cheese Pockets
  2. Add the flax meal. Stir until the dough is well-combined. 5-Ingredient Keto Ham & Cheese Pockets
  3. Roll the dough out between 2 sheets of parchment paper (I used a silicon mat and silicon rolling pin). 5-Ingredient Keto Ham & Cheese Pockets

  6. Poke some holes for releasing the steam while baking. Bake at 400 F (200 C) for 15-20 minutes or until golden brown and firm to the touch. 5-Ingredient Keto Ham & Cheese Pockets

Looks great!  But I don't have or use a microwave.  Suggestion?

You can try to melt the cheese with the cream cheese in a sauce pan (use low heat). I haven't tried it and you may need to add a little more cream cheese or cream (1 tablespoon) if it gets dry.

I intend to have just these and an avocado for 5 days in a row to see how it goes (my lazy version of a fat fast!). I'm on week 5 of my keto diet and the weight loss has stalled for 2 weeks.
I'm 5 2" and currently weight 129lbs...aiming to get to 120 but it's proving to be slow!...not your fabulous recipes though Smile
I've just ordered your fat bomb and ketodiet cookbook from Amazon and look forward to your keto recipes for slow cooker book at the end of this year.

These were so good! I did have to remake the "dough" because it wouldn't roll out without cracking. The second time I ground my flaxseed (Bob's Red Mill Organic Whole Ground Flaxseed Meal) in a coffee grinder to make it really fine. I also added some butter to the dough before cooking. Even my picky husband love it. Not sure why, but my net carbs on this recipe were 8 g and 575 calories.

I made this but it came out nothing close to this. It was all runny with cheese. Thinking maybe the 4tbsp of flax was not OK. Help please.

Would I be able to use coconut flour as a substitute?

Absolutely! You can use 2 heaping tablespoons of fine coconut flour instead of the 4 tablespoons of flax meal and it will work just fine (I prefer it even better).

This looks delicious, but I have to watch my calories as well as my macros. Would you consider a half pocket to be 1 serving?

Hi, what can I use instead of Provolone cheese? I live in France so ideally french cheese.

Any cheese will work but stringy cheese like mozzarella (low moisture type) or provolone is best. You can use cheddar, gruyere, manchego or fresh mozzarella.

Hi, is flax meal just flax seeds grinded down to a powder?
