This is my simplified, low-carb version of a Greek favourite - Spanakopita, a delicious savoury pie filled with spinach and feta cheese.

It's adapted from Keto Morning Hot Pockets which went viral over the social media. Based on several requests, I made the pockets nut-free by using flax meal instead of almond flour. Because flax meal is more absorbent than almond flour, I also added some cream cheese. If you can eat nuts, you can follow the original recipe that is made with almond flour - you will only need 4 ingredients: shredded mozzarella, almond flour, spinach and feta - that's it!

Ingredients (makes 2 servings)

  • 3/4 cup shredded mozzarella (85 g/ 3 oz) - use low-moisture, part-skim, shredded mozzarella cheese; not fresh mozzarella.
  • 1 heaped tbsp cream cheese (30 g/ 1 oz)
  • 4 tbsp flax meal (28 g/ 1 oz)
  • 85 g cooked & drained spinach (3 oz ) - squeeze out as much moisture as possible
  • 85 g feta cheese, crumbled (3 oz)


  1. Prepare the dough: melt the shredded mozzarella and cream cheese in a microwave oven for 1 minute, checking half way through. 5-Ingredient Keto Spanakopita
  2. Add the flax meal. Stir until the dough is well-combined. 5-Ingredient Keto Spanakopita
  3. Roll the dough out between 2 sheets of parchment paper (I used a silicon mat and silicon rolling pin). 5-Ingredient Keto Spanakopita
  4. Add the cooked and drained spinach and crumbled feta. 5-Ingredient Keto Spanakopita
  5. Fold over like an envelope and seal the dough. 5-Ingredient Keto Spanakopita
  6. Poke some holes for releasing the steam while baking. Bake at 200 °C/ 400 °F for 15-20 minutes or until golden brown and firm to the touch. 5-Ingredient Keto Spanakopita
  7. When done, remove from the oven and let it cool down for a few minutes. Cut in half and enjoy while still hot ... 5-Ingredient Keto Spanakopita ... or let it cool down and refrigerate for up to 3 days. 5-Ingredient Keto Spanakopita

Hope things are going well with your new twins!
I see that I made a comment that I love this recipe a few years ago. It’s delicious!
But now I have to be dairy free and can’t make your crust. Dairy free cheese doesn’t melt the same way. The vegan feta cheese from Trader Joe’s is terrific; so i can make the filling.
Any suggestions on what to do for the crust? The filling is terrific, I just have to figure out a non dairy wrap.

I made this recipe today- in fact it's currently in the oven baking! I plan to have it with a side salad for tonight's dinner. It smells divine and I am eagerly awaiting its completion for my OMAD. Thank you for a wonderfully easy, quick and I know delicious recipe. I did saute the spinach in olive oil and butter with garlic, parsley and oregano first and let it cool while I made the dough. It smells like dinner is ready!! I shared your recipe on 3 keto groups that I am in and tagged you on Instagram - with a photo! i love Mediterranean food and this was a Godsend!!

Spanakopita is one of my all time fav Greek dishes! I made yours today & it was so tasty & easy!
I added some fresh dill to the spinach as the Greeks do. Actually the crust reminded me of the delicious crescent shaped pastries I had in Greece! Thx so much, I’m in spanakopita heaven!

Yes, I'd say microwave is the easiest way, or oven preheated to about 150 C (fan) and bake for 2-4 minutes 😊

I just wanted to know if you heard claims or found studies saying that flaxseed have Phytoestrogens and we should avoid them. I got this from a well known low carb author/blogger:
"This phytoestrogen compound reduces sex drive, increase breast size in men and increases estrogen dominant cancers such as thyroid, uterine, ovarian, breast and prostate cancer in men."  
What's your opinion about this?
Btw I got the above quote from a well know low carb/keto/paleo author/blogger.

Hi Nouldy, the claim is not accurate and doesn't apply to flax seeds - this claim is about soy rather than flax: Is Flaxseed Healthy? Safety Concerns, Benefits & Recommendations
In short: "In contrast to flaxseed's apparently protective effects on breast cancer, study results regarding soy and breast cancer risk have been mixed. Unlike the lignans in flaxseed, flavones and other phytoestrogens found in soy seem to either stimulate or suppress cancer growth, depending on dosage and other factors."

@Nouldy  You are absolutely correct flaxseed does have Phytoestrogens and should be avoided AT ALL COST!! If someone consumes's at their own risk. There are plenty of low carb / keto or heather recipes online to make a Spanakopita pocket.
A simple goggle search EXPOSES flaxseed:

Flaxseed is high in soluble fiber and in lignans, which contain phytoestrogens. Similar to the hormone estrogen, phytoestrogens might have anti-cancer properties

This is absolute nonsense and you're just parroting pseudoscience. It's shocking that simply doing a Google search is proof enough for you, especially posting this right after my response, not bothering to read it. Have you read the papers? I doubt that. I addressed that exact nonsense in the comment above. And do you know what else I found on Google? That the Earth is flat.

This was excellent!  ^ ounces of frozen chopped spinach really is 3 ounces when squeezed dry.  I added one giant clove of garlic.  Love the taste of the golden flaxseed meal.
A definite 10!  Will check out your breakfast sandwiches.  
Would like to make a double recipe next time.  I'm wondering, though, how the goat or feta cheese will freeze.

Thank you Judy, glad you enjoyed! Goat's cheese is great, I really like the flavour. It's nice with some additional oven roasted butternut squash (maybe 2 tbsp diced per pocket) and a drizzle of balsamic. Because you'll only need about 1/2 teaspoon per pocket it won't add too many carbs and it's really delicious.

Hi Marina! I have made this several times and love it! The bottom of the pocket is a bit soggy though. I was wondering if you have ever tried cooking them (or one if the pizza recipes in the app) on a pizza stone. Thanks

I made this, and the dough crumbled completely! Also, my dough looks very dark compared to your picture.

Hi Trisha, I think you may have used the wrong type of mozzarella. You'll need the low moisture shredded pizza style mozzarella. If the dough is dark I think you just use flax meal made from brown flaxseed rather than golden flax. I hope this helps!

This morning I made the strawberry Keto milkshake, and it was really good.  However, I am a paper person and even though I sent the recipe to my Pinterest account, following it on my phone was a little difficult.  I would like also to print this Spanakopita recipe but the Print function on this site will not allow me to do so. I really prefer to study a recipe in my and if I make any adjustments I like to memorialize those changes/additions on the printed version. Thank you very much for creating such great recipes!

I haven't tried freezing these but I think you can as long as you pre-cut them 😊

Can this recipe be doubled?


I did this same basic idea using the Keto Fathead Pizza dough and making a Parmesan chicken bake, like the ones Costco sells.  I filled it with cream cheese, chicken, bacon and, of course, Parmesan.  Absolutely wonderful.  I have no clue the macros but definitely low carb 😉

Hi Stephanie, I'd love to say yes but I haven't tried it and I can't tell if it will work. My assumption is that it won't work. What you can do instead is to use this dairy-free dough to make the pockets: The Best Low-Carb & Keto Tortillas, Taco Shells & Nachos
And then just fill them with anything else (chorizo, roasted peppers, bacon, etc)

It may be fine but I suppose the dough may get a bit sticky. If you use a silicon mat with a silicon rolling pin or 2 pieces of parchment paper to roll it out, it should be fine.

I really wanted to like this but found the inside of the crust 'slimy'.  Perhaps almond flour would give better results.  

You can definitely use alternatives! You can use 2 heaped tablespoons (24 g/ 0.9 oz) of coconut flour instead of the flax.
Or use 1/3 cup almond flour (just skip the cream cheese like in this recipe): Keto Morning Hot Pockets

I love how versatile this recipe is! Fool proof and so easy. I can't thank you enough for this new favourite! I struggle to find cream cheese, so I used whole milk cottage cheese instead. I also used some "Mexican blend" shredded cheese instead of mozzarella (I have a potato allergy and it is strangely difficult to find mozzarella without potato additives around here) It gives a stronger taste, but I love it and I am glad it worked. Definitely makes me ponder some more variations, like perhaps sticking some poblanos in there and using cotija cheese instead of feta!

Thank you Pudgy, that's good to know! Do you know exactly what cheese it was (brand)? I find it very hard to substitute mozzarella cheese. The one I used has indeed some potato starch but it's still very low in carbs - not good for allergies though. I did try the regular mozzarella block but it didn't work that well (you can see in this recipe that the dough was too moist: Fat Head Pizza with Pepperoni & Jalapeños)
I tried it with cooked chorizo, feta & jalapeno pepper, and with tuna & provolone. The options are endless 😊

Yes! It was the Whole Foods brand: 365.
I noticed today that they actually have two "Mexican Style" cheese blends. One is organic and the other isn't, and there are different cheeses used in each. I used the one that was not organic (HUGE price difference there). I noticed they have an Italian blend of cheeses as well and will give that a try some day! I think because there are hard cheeses in these blends, that may help keep things from becoming too moist?

This is SO good! I used frozen chopped spinach and I found that about twice the weight of frozen spinach then halved during cooking/draining, and that gave me the right amount of spinach for the recipe (aka weigh out twice the weight in frozen spinach, then cook down, drain, and measure again). I just cooked & defrosted it in the microwave at the same time, super easy. I grated 3 cloves of garlic into the spinach after cooking & draining because we love garlic, and it really kicked this up a notch. If you're having trouble making the 'dough', make sure your cheeses are melted enough; I had to do a few extra 30 sec rounds in the microwave before things got melted enough to not be super stringy, and then it was very easy to mix in the flax. This produces a beautiful, thin crust! Super versatile. This recipe is definitely a keeper, thank you so much for it. 😊

I think you may have used the wrong mozzarella. In this recipe: Fat Head Pizza with Pepperoni & Jalapeños, I used a block of mozzarella that I grated before melting and it was too crumbly and moist - you will see that it was a bit sticky - it wouldn't work in these pockets. It has to be low moisture shredded mozzarella.

Unfortunately, I just found out I am dairy intolerant.  ☹️  Dairy was the foundation of my keto diet, but now I have to make this major adjustment.  
I'd love to try this recipe…but how would you suggest making it without dairy?  And how do you think I can modify other recipes I love?  Frustrated with my new limitations…I so love cheese😔

I haven't tried it in this recipe but I'm sure it will work, just make sure there isn't excess moisture in the filling. You could fill it with eggs, bacon, chorizo, cooked mushrooms, peppers, ... I hope this helps! 😊
