If you make my crispy keto crackers, you have to try them with this quick and easy cheese & bacon dip! I made mine with cheddar, caramelised onion, chili pepper and crisped-up bacon. Caramelised onion brings a sweet umami, while chili pepper adds extra heat and takes the traditional cheese dip to the next level. Apart from cheddar, you can try Swiss cheese or even mozzarella!

Ingredients (makes 12 servings)

  • 2 tbsp ghee or lard (30 g/ 1.1 oz)
  • 1 large white onion (150 g/ 5.3 oz)
  • 1 small chili pepper or jalapeño pepper (14 g/ 0.5 oz)
  • 8 slices unsmoked bacon (240 g/ 8.5 oz)
  • 1 cup cream cheese (240 g/ 8.5 oz)
  • 1 cup sour cream or creme fraiche (230 g/ 8.1 oz)
  • 2 cups grated cheddar or Swiss cheese (225 g/ 8 oz)

Instructions

  1. Preheat the oven to 175 °C/ 350 °F. Peel and slice the onion and chili pepper. Heat a large pan greased with ghee. Add the sliced onion and chili pepper. Low-Carb Cheesy Bacon Dip

Hi Martina,
I'm trying to get ahead with some Christmas treats. Do you think this would be ok to freeze before it's baked and then when we're ready, defrost and then bake it?

Hi Kellie, I'm sorry for the delayed response! I wouldn't freeze the cheese sauce as the liquids would separate and freeze and then the result would be curdled.

I think one could use leftover cooked ham too instead of the bacon. This sounds delish.

Can we use chicken instead of Bacon

Yes, I think that will work too. Just make sure you cook it before mixing with the cheese.
