Have you heard of Pesto Eggs? They are the latest (and easiest) TikTok trend! Think of perfectly fried eggs with a flavor boost from pesto, all in less than 15 minutes.

I've been making my own version of pesto eggs for years although I've never considered cooking the eggs directly in pesto. Instead I cook mine in ghee or olive oil, and then spread pesto on top of the cooked eggs, just like in these Keto Green Eggs with Bacon.

So here's my own twist on TikTok's viral Pesto Eggs but with marinara pizza sauce instead of pesto. These easy breakfast eggs are then topped with cheese, pepperoni slices and fresh basil. A simple keto approved breakfast meal in just a few minutes!

Ingredients (makes 1 serving)

  • 1/4 cup homemade Marinara Sauce or any sugar-free pizza sauce (60 ml/ 2 fl oz)
  • 1 tbsp extra virgin olive oil (15 ml)
  • 3 large eggs
  • 1/4 cup shredded mozzarella cheese (28 g/ 1 oz)
  • 6 slices of pepperoni or cured chorizo (18 g/ 0.6 oz)
  • fresh basil to serve

Instructions

  1. If you need to make some marinara sauce, follow this recipe. It will only take 5 minutes to prepare. You can also use any sugar-free pizza sauce. Keto Breakfast Pizza Eggs
  2. Heat a medium pan greased with olive oil over a medium-high heat. Add the marinara sauce and spread evenly over the pan. Crack in the eggs. Keto Breakfast Pizza Eggs
  3. Use a spatula to gently break the egg whites. This will help them cook faster and combine with the marinara sauce. Tip: if you don't like runny yolks, use the spatula to break the yolks and swirl through the whites and marinara.
  4. When the egg whites are almost set, sprinkle with the shredded cheese and top with the pepperoni (or cured chorizo) slices. Cook for another 2-3 minutes until the cheese is melted and the egg yolks are still runny. Keto Breakfast Pizza Eggs
