Think of these little bites as a cross between bacon wrapped jalapeño poppers (minus the jalapeño) and Millionaire's Bacon. You’ve got the heat from a bit of cayenne and paprika and some sweetness from a bit of Swerve.

Those two flavors combined with the savory bacon and the nutritional powerhouse that’s liver and you’ve got one great snack!

Ingredients (makes 4 servings)

  • 12 pieces chicken liver (340 g/ 12 oz)
  • 1/2 tsp sea salt
  • 12 slices of bacon (450 g/ 1 lb)
  • 1 tbsp granulated Swerve or Erythritol (10 g/ 0.4 oz)
  • 1 tsp paprika
  • 1/2 tsp cayenne, or to taste
  • 1/2 tsp black pepper

Instructions

  1. Preheat your ovens broiler and line a baking sheet with aluminum foil. Sweet & Spicy Chicken Liver Bites
  2. Sprinkle the chicken livers with salt and wrap each piece in a slice of bacon securing the end with a toothpick or skewer.
  3. Mix the remaining spices together... Sweet & Spicy Chicken Liver Bites ... and sprinkle both sides of the liver bites. Sweet & Spicy Chicken Liver Bites
  4. Broil for 6-8 minutes per side rotation occasionally until the bacon is crisp and the livers are cooked through. Sweet & Spicy Chicken Liver Bites Serve immediately, or store up to 3 days and reheat as needed.

excellent. Needing a nutritional boost and craving satisfier, I tried these. Oh yum! However, there was a little too much grease coming from the bacon, and being so close to the flame, well you can guess what happened. Next time, which will be very soon, I will try the air fryer method.

What temp do I set the broiler? Mine goes up to 500 I think. Doesn’t say in the instructions. Thanks

Hi Erika, I would preheat the broiler to the hottest setting. 500 is perfect.

Just ate my first one fresh out of the grill (in oven feature). OMG, so yummy 😊)
I cooked them for at least 20 minutes in total, turning them regularly and basting them intermittently with the melted bacon fat. Definitely a winner!

I love liver but have gotten a bit bored with the "always in the pan" method.
As I don't have a broiler (not too clear what that is anyways, my oven has a grill function) I used my airfryer. Assuming "put under broiler" means relatively hot, I turned my airfryer to 160° C and about 6 minutes on every side (I turned them once) resulted in crisp bacon and wonderfully soft and smooth liver. Thank you VERY much for this recipe.

This combines two things I love into one yummy bite! Quick question - you stated about 15 min. total time, but the cook time in the recipe details states 6-8 minutes broiling per side which would total 12-16 minutes. Before I try this, I would like clarification so I plan properly and also don't burn these up! 😊 Thanks!
