This frozen low-carb strawberry daiquiri is the perfect drink for a hot summers afternoon soaking up some sunshine. The lime adds a little tartness so make sure to adjust sweetener accordingly depending on your tastes.
This cocktail works best in a high-powered blender such as Vitamix to ensure that the ice is broken up into smaller pieces with no large chunks.
For something extra refreshing and a little different, add a few basil or mint leaves to the mix!

Ingredients (makes 2 servings)
- 1/2 cup white rum (120 ml/ 4 fl oz)
- 3 tbsp fresh lime juice (45 ml)
- 1 tbsp powdered Erythritol or Swerve (10 g/ 0.4 oz) or 3-5 drops liquid stevia
- 1 cup fresh or frozen strawberries (150 g/ 5.3 oz)
- 1 cup ice cubes
Instructions
- Remove the green parts of the strawberries.
- Add all ingredients to a blender and blend on high until the strawberries are blended and the ice is crushed.
- Pour into two glasses and garnish with fresh strawberries.
- Serve immediately.
