I'm excited to share with you my latest creation - this Bacon & Avocado Chaffle Sandwich! Just like this Ham & Cheese Chaffle Sandwich it's a great meal prep and lunchbox option for busy days.

I've been experimenting with chaffles for quite some time, and I've come up with a unique method for making them super fluffy without any cheese bits or eggy taste! It's the very same method I came up with when working on my Keto Chaffles book!

My secret? I blend the batter until it's smooth and creamy, which creates the perfect texture for a chaffle sandwich. And what's even better is that this sandwich is loaded with crispy bacon and creamy avocado, making it a satisfying and delicious high-protein meal any time of day.

So, let's get started on this recipe and whip up a batch of chaffles that are sure to impress!

What Do I Need to Make Chaffles?

A 4-inch Dash Mini Waffle Iron is the perfect tool to make chaffles but you can use a regular waffle maker which will produce bigger waffles. You can always spread the batter thin to get 2 waffles.

Ingredients (makes 1 sandwich)

Chaffles:
Filling:
  • 4 thin-cut or 2 regular slices crisped up bacon (32 g/ 1.1 oz)
  • 3 tbsp full-fat cream cheese (45 g/ 1.6 oz)
  • 1/4 medium avocado, sliced (50 g/ 1.8 oz)

Instructions

  1. Make the chaffles according to the instructions here to make two waffles (nut-free options included). You can either use a mini waffle or panini maker. Bacon & Avocado Chaffle Sandwich
  2. Let the chaffles cool down completely. They will be soft when they are warm but will crisp up as they cool down.
  3. Meanwhile, cook the bacon on a pan or in the oven until crispy. Bacon & Avocado Chaffle Sandwich
  4. Spread cream cheese on top of each waffle. Top with avocado and crispy bacon. Top with the other waffle.
  5. Enjoy immediately or store the chaffles, without any topping, in a sealed container at room temperature for up to 3 days, or in the fridge for up to a week. Just splurge $10 and get a dash waffle maker, you’ll love it.  I got mine from Kohl’s and used all kinds of coupons, but Walmart has them too.
