Dulce de leche is a delicious confection that's very common across Latin America. While delicious, traditional dulce de leche is made with sweet condensed milk which is full of sugar, so it's a no-no for anyone following a healthy low-carb diet.

My dulce de leche is different! It's made with homemade keto condensed milk which is made with Allulose, a natural low-carb sweetener that caramelizes just like sugar!

How To Make Keto Dulce De Leche

Making keto-friendly dulce de leche is easy! You will start by making our keto condensed milk and then keep cooking it for longer to achieve that nice golden brown colour. Please make sure you are using Allulose in this recipe as other low-carb sweeteners won't caramelize and would make the texture gritty.

What is The Difference Between Caramel and Dulce De Leche?

While they are similar, the flavor, texture and ingredient composition is slightly different. Caramel is made by cooking the sweetener with butter and adding cream at the end of the cooking process. Also, there is less cream and no almond milk used in keto caramel compared to this dulce de leche.

Ingredients (makes about 1 1/4 cups/ 300 ml)

  • 1/2 stick unsalted butter (57 g/ 2 oz)
  • 2 cups heavy whipping cream (480 ml/ 16 fl oz)
  • 2 cups unsweetened almond milk, cashew milk or poppy seed milk (480 ml/ 16 fl oz)
  • 1/2 cup granulated Allulose (100 g/ 3.5 oz)
  • Optional: sea salt and vanilla to taste

Instructions

  1. To make the dulche de leche, you'll need a batch of our Keto Condensed Milk. If you don't have any, follow the steps below. You will need to use Allulose to make caramelized, golden brown and smooth dulche de leche. Keto Dulce de Leche
  2. To make keto condensed milk: Place everything into a saucepan. Bring to a boil over a medium-high heat. Once it starts simmering, turn the heat down to low. Reduce to about half of the volume. This will take 30 to 45 minutes. When done, remove from the heat and blend using an immersion blender until smooth and creamy (this will help remove any clumps). Optionally, add sea salt and vanilla to taste.
    Note: For dairy-free condensed coconut milk, follow the instructions here. Keto Dulce de Leche
  3. To make dulce de leche: Cook the condensed milk on medium-low for 10 to 20 minutes, stirring occasionally, until golden and caramelized. The exact time will depend on the heat.
  4. Take off the heat and set aside to cool down. Depending on how much you reduce it, you'll get anything from 1 1/4 cups (300 ml) to 1 1/2 cups (360 ml) of dulce de leche. Keto Dulce de Leche

Sooooo good! I didn’t know you could make keto dulce de leche. This my fav this summer!

Hi Martina:
I am originally from Argentina, where Dulce de leche was born.
Unfortunately, once again this is not a dulce the Leche recipe.
Dulce de leche is never made with butter and sometimes (only) a little heavy cream but the original recipe is :
Milk, sweetener, and baking soda.
The sweetener has to be 22% of the amount of milk and baking soda :1 gr x milk litter.
The brown color is given by the baking soda .
THAT will give you real dulce de leche.
The butter doesn't help at all.

Hi Martha, I totally appreciate it, however, as you may know I can't really use milk because the carb count, especially in reduced milk, would be way too high. Perhaps I could have used baking soda and skip the butter but then it still won't be the original Dulche dDe Leche. Butter contains milk solids and it browns just like cream. When it comes to keto, bread is not bread, pasta is not really pasta.... it's all about finding the best alternatives 😊

But if you use regular butter you can also use milk ...
Or you can use coconut cream or coconut milk 😜

Not if you are keto/low-carb. Just for comparison, 100 ml of whole milk contains around 5 g carbs and the same amount of butter contains virtually zero carbs 😊

I never understand individuals who will offer commentary yet don’t fully comprehend the topic at hand … its such a waste of everyone’s time and energy to explain to them the facts.  This post is not about DULCE DE LECHE or its ORIGINS.  And by the way Martha dulce de leche was not “born” in Argentina, stop that. 😊 It’s a big deal in Cuba where I am from and pretty much many other countries. Kinda hard to pinpoint the origin of any food really, Italians did not come up with the noodle either, did you know that Martha?  
Note: keto = low carb, zero sugar = no milk (high sugar and carbs). This keto community has enough work trying to convert conventional unhealthy foods into keto ones without the added noise and nonsense from uninformed people. Please!
