It's no news that the ketogenic diet has numerous health benefits. Apart from weight management, the ketogenic approach can be used to treat health conditions such as diabetes, epilepsy, and even cancer.

This week I had the rare opportunity to review a fantastic cookbook, The Ketogenic Kitchen written by Domini Kemp and Patricia Daly. Domini is a food writer and restaurateur, and Patricia is a nutritional therapist who runs two popular websites ParticiaDaly.com and KetoForYou.com. Patricia was also one of the experts at the Keto Summit and her talk "Cancer: A Practical Approach for Preventing and Healing with Keto" is one of the must-watch interviews.

What I Like About The Book

This book is pretty unique and it's so much more than just a cookbook. Both Patricia and Domini have successfully battled their way through cancer and share their personal experience and practical tips on how a low-carb approach can help nourish your body for optimal health.

This book is full of delicious recipes that are quick and easy to prepare with few ingredients - and the photos are mouthwatering! All recipes are low-carb and most are ketogenic and paleo/ primal.

Who Is This Book For

The first part of the book by Domini is suitable for those who follow a low-carb approach, while the second part by Patricia is ideal for those who follow a ketogenic (i.e. very low-carb) diet. Apart from recipes, this book also includes well-researched tips and easy-to-follow diet plans that are perfect for those who are new to the diet.

Keto Kale Crackers

Today I'm sharing one of the many amazing recipes from The Ketogenic Kitchen: Kale Crackers! The ingredient I was most excited about in this recipe are Brazil nuts. There is no better dietary source of selenium which is essential for thyroid health and great for those with thyroid issues, like me! These keto crackers are crispy and taste great, especially with low-carb toppings such as:

These crackers are fabulous with pestos, pâtés, guacamole and all kinds of spreads. We know for a fact that most people wouldn’t go far without bread and crackers, which is why you’ll find several recipes for them throughout the book. These crackers can be frozen, but they also keep for at least five days in an airtight container.

Nutrition facts are calculated from 28 crackers. Macronutrient ratio: Calories from carbs (6%), protein (11%), fat (83%)

Ingredients (makes 20-28 crackers):

  • 135 g curly kale (4.8 oz)
  • 135 g Brazil nuts (4.8 oz)
  • 135 g sunflower seeds (4.8 oz)
  • 2 large eggs
  • ½ large white or yellow onion (75 g/ 2.6 oz)
  • 2 tbsp solid virgin coconut oil (54 g/ 1.9 oz)
  • 2 tsp Chinese five spice powder
  • 1-2 tsp salt (I like pink Himalayan)

Note: You can make your own Chinese five spice blend. Simply mix equal parts of ground cinnamon, ground cloves, fennel seed powder, star anise powder and Szechwan peppercorn powder.

Instructions:

  1. Preheat the oven to 150 C/ 300 F. Line a baking tray with nonstick baking paper. I used strong baking paper lined with aluminium foil on one side that won't stick or tear. |Book Review: The Ketogenic Kitchen (Kale Crackers)
  2. Put the kale leaves into a food processor and process until finely chopped. Add the remaining ingredients ... |Book Review: The Ketogenic Kitchen (Kale Crackers)
  3. ... and process again to a smooth paste. Using a spatula, spread the paste onto the lined tray as thinly as possible. |Book Review: The Ketogenic Kitchen (Kale Crackers)
  4. Bake for 55–70 minutes, depending on how crunchy you like the crackers. Allow to cool down, then break them into pieces by hand or using a pizza cutter.
    I wanted to make the crackers extra thin and used 1 ½ baking sheets and made 28 crackers (instead of 20 crackers).

My husband and I started following a keto diet in January interspersed with paleo.  It was not for weight loss or control but to see if the lack of carbs would starve my husbands prostate cancer cells and lower the PSA count. He opted out of radiation and is using hormone deprevation and the keto diet as well as exercise. I remain the head chef, so am constantly planning appropriate keto meals to stay on task. Eating this way gives me a clarity and stamina I had only previously dreamed of. I no longer need will power, just knowing the facts and applying them diligently, I simply feel fabulous. I need to lose a lot of weight, and I think the keto diet would be great for my health too (and my mom and kids too).  I am insulin resistant and every time I have any carbs (even just one cracker) I feel extremely tired afterwards and either need a nap, or am useless for the rest of the day.  I really need to take action now, and the cookbook will help me with awesome recipes to make for myself and my family.  My mom has osteo-arthritis and she feels less pain when eating keto, although I've run out of recipe ideas, and eating the same thing almost every day makes it difficult to follow an eating plan, so the cookbook will help there in a big way Smile

I would love to have a copy of this cookbook as I have stage 4 breast cancer and am using the keto diet to help kill cancer cells.  I'm also not eating dairy or red meat so I have less choices of food.  I've been looking for a good cracker recipe in the last couple of weeks and this might fill the bill.  I still have kale in the garden.

Following a keto diet helps me live more lightly, I eat less but better quality and I eat less often but am more mindful about what. We are all living longer, my mother is mid-90's, and I want to be as well as possible should I live as long. I don't worry or think about my weight so much these days, I generally feel calmer and happier - I am what I eat! I follow a vegan keto diet, slightly more time consuming than either a vegetarian or omnivorous version, but well worth it for me.

I stumbled onto information on a ketogenic diet by surfing the net looking for info on whether ketosis was a dangerous state to be in, as I had entered ketosis on a different diet that I had started. I was so impressed by the statistics on how it improves one biomarkers for good health that I decided to follow it instead. My burisitis in both hips has improved dramatically after only 6 weeks now, sinisitus has almost resolved and have not had episodes of vertigo. Amazing, its the only diet I have ever stuck to, will be doing this for life, dont feel deprived of anything, have lost 4kgs as well, bonus. Still getting my head around the ratios and portions it will get easier with experience. I have the blood ketone meter and monitor it 1 or 2x daily to see what foods affect my readings. I have gallstones so I am hoping to resolve gallbladder attcks as well. Best change that I have ever made.

I follow the Ketogenic Diet for health reasons.  Both my mother and sister had/have diabetes.  In order that I may not succumb to this disease is the reason I follow it.  As a side benefit, it has lowered my lipid readings to very acceptable numbers.  There is no other way to eat in my opinion.

For health reasons. A year ago a was told that was pre diabetic,  so decided to change my habits. I have lost weight years ago  with a low carb diet and now that I'm older and wiser know that a keto lifestyle is the healthiest way to eat.

As a formerly thin person who gained 30% more weight as my metabolism slowed, I researched obsessively on the most efficient and healthy way to lose weight.  I found that a ketogenic approach seemed the most successful in all reports.  I strictly followed a keto plan for 3 months and lost 20 lbs.  I have more to go, but not only do I feel great from carrying around less weight and wearing smaller clothes; but also have found a sense of control over my life by understanding I can make a decision and stick to it and positively affect my health.

I just restarted Keto after a year of being off of it. Im so glad I have a resource like this website otherwise I dont think I would be doing as well as I am! Thanks for being awesome! This recipe looks so so so good and I can not wait to try it this weekend. I definitely need crunch in my life.

And I follow Ketogenic diet because it lowers my A1c, cholesterol, and triglycerides.   A wonderful side effect is weight loss!
