This oven-roasted broccoli is a quick & easy Mediterranean-style side dish. This cooking technique makes the broccoli crisp-tender and keeps it full of flavour. It makes a great side to meat, especially chicken and fish.

Ingredients (makes 4 servings)
- Preheat the oven to 230 C/ 450 F. Wash the broccoli and cut into florets. Mix the minced garlic with melted ghee.
- Place the broccoli florets in a large baking dish and toss with the garlic ghee. Squeeze the lemon over the broccoli and season with salt.
- Place in the oven and bake for 12-15 minutes.
- When done, the broccoli should be crisp-tender. Enjoy as a side with meat such as chicken or fish.
