These sugar-free lemon & lime Sour Jelly Worms are the most awesome keto Halloween recipe! So much fun to make with the kids and super easy.

These low-carb jellies are also made with grass-fed gelatin, so good for your gut health and you can leave off the sour coating if you prefer. They’re super delicious with or without it.

I chose to keep the lemon and lime separate for different tastes and colour but you can totally mix together if you prefer. I also used two natural food colourings to make the colours pop but again you don’t have to use this. They still turn out nice, just paler. The yellow was a turmeric based food colouring and the green was spirulina with a touch of turmeric (see below).

The sour coating is made from granulated low-carb sweetener (I used Erythritol but you could use monk fruit or Swerve too) and organic Vitamin C powder. Since the sour coating for these low-carb jellies doesn’t contain any preservatives, they need to be eaten pretty much straight away or the coating absorbs into the jellies. It still tastes delicious though, it just doesn’t last too long.

Without the coating these healthy sugar-free gummies store well in the fridge for 3 - 4 days so you could always just make up a speedy batch of coating (takes about 30 seconds) and coat them in it when ready to eat.

Of course, these low-carb jellies don’t need to be made into worms. How about Mad Marching Gummy Bears (see below)? I may have got totally carried away in the Halloween spirit and made these too! Instructions

  1. Place the gelatin in a bowl. Add the water and allow to bloom for 10 minutes whilst you squeeze the lemons and limes.
  2. Juice the lemons and limes. Sugar-Free Sour Jelly Worms
  3. Place the lemon juice in one pan and the lime juice in another. Add 1/2 the bloomed gelatin and 1/2 the sweetener to each pan. Heat on a medium flame and whisk until fully melted.
  4. Turn off the heat and add the natural food colouring. Sugar-Free Sour Jelly Worms
  5. Pour the mix into your jelly moulds. I used a pipette to make worms for Halloween but you could use any you like. Place in the fridge for 2 - 3 hours or until fully set. Sugar-Free Sour Jelly Worms
  6. When set, remove the jellies from the moulds. Sugar-Free Sour Jelly Worms
  7. To make the sour coating, mix the granulated sweetener and the powdered citric acid in a bowl. Dip the jellies in the sour mix and eat straight away. It's best to coat these just before serving. As there’s no preservatives in these, after a while the sour coating absorbs into the jellies but they still taste good! Sugar-Free Sour Jelly Worms
  8. Place on a wire wrack and enjoy. Best eating fresh with the coating and without the coating can be stored in the fridge for 3 - 4 days. If you want to add the coating, bring jellies to room temperature to soften slightly before coating them. Sugar-Free Sour Jelly Worms
