Ingredients (makes 6 servings)

Instructions

  1. To a medium saucepan add the strawberries (reserve about 4 strawberries for topping), sweetener, and 1/2 cup (120 ml) water. You could even use frozen strawberries and use them all in the cream (none for topping). Fluffy Keto Strawberry Cream
  2. In a small cup or bowl, sprinkle the gelatin over the remaining 1/4 cup (60 ml) cold water and let stand for a couple minutes to soften. Fluffy Keto Strawberry Cream
  3. Using a spatula, break the strawberries into smaller pieces. Cook over medium-low heat, stirring frequently, until the sweetener has dissolved.
  4. Transfer to a blender or use an immersion blender and process until smooth. Fluffy Keto Strawberry Cream
  5. Pour the strawberry mixture back into the saucepan and add the bloomed gelatin. Heat up over a medium heat until the gelatin has just dissolved.
  6. Take off the heat and set aside to cool down to room temperature. You can speed this up by placing the saucepan in a bowl filled with ice water. Fluffy Keto Strawberry Cream

It calls for granulated Swerve or Erythritol, would Monkfuit with erythritol work as a substitute?  

I'm sorry it took a while to reply, I have been enjoying the fourth trimester with our twins 😊 Yes, that would be a suitable alternative.

I love the fluffiness of this mousse, I can't wait to make this! I don't have strawberries but have frozen blueberries. Would that work? Do I need to adjust the amount?
The Amazon reviews... I noticed that too. I never buy any product that has unnaturally high rating and a ton of reviews. You just need to read through a few to see that they are fake. I know you guys must be struggling with all the copycats, I see them running their promos on Facebook all the time. The group I follow doesn't allow posting free amazon kindle books and I don't think yours does either? Once I got such a book and it was awful. Recipes from other bloggers that I recognized, almost no images and full of grammar errors.

Hi Emily, that will work well! You can use the same amount, blueberries will be delicious and will make this pretty. If you only have frozen I'd blend all of them in (none for topping). Yes, with Amazon it's not what it used to be. This is a big issue and they know it. It's a place that serves their interests, not the customer. When I find a product on Amazon I first check other websites and then decide if I want to buy it, or buy elsewhere depending on the price. I just don't trust their reviews. Having published 9 books (with the 10th to be published) while sending a lot of traffic to Amazon, I know when a product rating isn't genuine. I know what is a realistic number of reviews. People rarely leave reviews as they are too busy and they easily forget.

This was AWESOME. I made it twice this week and I'm thinking of other flavor variations... maybe raspberry chocolate? 😊 I made one of them with coconut cream. I used the really thick coconut cream, not coconut milk. I do that by chilling 2 cans of coconut milk and then I only the thick creamy thick part. So good!
