When I was working on my Fat Bombs Cookbook, I created over 100 recipes for it. Not all of the recipes, including these Avocado & Egg Fat Bombs, made it to the final cut and I will be sharing them on my blog. This recipe features two of my favourite keto superfoods:

  • Avocado. It's one of the best sources of heart-healthy monounsaturated fats and potassium (one of the best remedies for keto-flu).

  • Eggs. Apart from vitamins and minerals, eggs contain the highest-quality protein. They are one of the best sources of B vitamins, and choline that are essential for your heart, brain and liver. Forget "detox" diets and liver cleanses. Their effectiveness is not supported by scientific evidence and some methods of cleansing may even hurt you. A low-carb diet high in omega 3 fatty acids and choline will keep your liver healthy: eat more eggs, garlic, leafy greens, fatty fish and turmeric.

Nutrition facts exclude cucumber slices and egg whites. Macronutrient ratio: Calories from carbs (3%), protein (6%), fat (91%)

Ingredients (makes 5 servings, ~ ¾ cup):

  • 3 large cooked egg yolks
  • ½ large avocado, peeled and seed removed (100 g/ 3.5 oz)
  • ¼ cup mayonnaise (55 g/ 1.9 oz) - you can make your own
  • 1 tbsp lemon or lime juice
  • ½ tsp salt or to taste (I like pink Himalayan)
  • freshly ground black pepper
  • 2 tbsp chopped spring onions or chives
Eat with:
  • freshly cut cucumber slices, bell peppers or crispy lettuce leaves
  • leftover cooked egg white halves (if making deviled eggs)

Instructions:

  1. Start by cooking the eggs. Fill a small saucepan with water up to three quarters. Add a good pinch of salt. This will prevent the eggs from cracking. Bring to a boil. Using a spoon or hand, dip each egg in and out of the boiling water - be careful not to get burnt. This will prevent the egg from cracking as the temperature change won't be so sudden. To get the eggs hard-boiled, you need round 10 minutes. This timing works for large eggs. When done, remove from the heat and place in a bowl filled with cold water. I like and always use this egg timer! When the eggs are chilled, peel off the shells. |Avocado & Egg Fat Bombs, Deviled Eggs and Giveaway!
  2. Halve the avocado and remove the seed and peel. Cut the eggs in half and carefully - without breaking the egg whites - spoon the egg yolks into a bowl. |Avocado & Egg Fat Bombs, Deviled Eggs and Giveaway!
  3. Place the avocado cut into pieces into a food processor and add the egg yolks, mayonnaise, lemon juice, salt and pepper. Process until smooth. I bought your book and absolutely love it!  My first fat bomb was chocolate ganache, rolled in chopped pecans.  My husband is not a fan of pecans, but he is totally addicted to these.  I use them for an IF with my coffee and I find I'm not hungry until around two in the afternoon and that feeling is a minimum urge.

My 3 favorite Keto Foods are eggs, avocado and nuts. I love how clear and organized your recipes are. I actually cook and enjoy eating so much more since I began this diet. My 3 favorite keto foods would have to be:
1) Avocado = So versatile! Whip 'em up in the food processor and use as a spread, add to tomato and onion and make guacamole, or...just cut, peel and eat!
2) Organic eggs = Eggs are my everyday morning staple! Two scrambled eggs with (fill in veggie-of-the-moment here! And picking them from the seasonal backyard garden is the bestest!!) If not purchased at the grocery store, I love getting eggs from my mom's friend's chickens.  The chickens are vegan fed!
3) Nuts = Must have nuts!  I'm a crunchy-munchy.  I LOVE crunchy snacks and nuts hit the spot!  My favorite? Pistachios!  :O)

I love coconut manna, macadamia nuts and coconut oil. I always have these at home and make fat bombs with the manna, oil and cocoa-- no sweetener added. I don't have a bi sweet tooth so I like the idea of non-sweet fat bombs!

I have been struggling to get into ketosis. As a vegetarian, I find so many of the high protein foods are also high in carbs, and at one point I did a diet called Ideal Protein which was great for weight loss and ketosis, but terrible for keeping off the weight. I'm wanting to switch to a ketogenic diet because I feel that for my body, it is healthier. I am glad to have found your blog, and this cookbook looks wonderful!

While I appreciate that your book is currently on special on Amazon I will admit to being disappointed that it isn't on special on iBooks. I prefer using iBooks because it's easier for me to share books with my husband on that platform. When he is easily able to browse my cookbooks and add food to our meal plan things work out more smoothly around here.

In very broad "food" terms, I have mainly two kinds around the house:  fat and fiber.  In specific terms, I have the kinds of fat and fiber that keep our blood sugar in check--this is going to be different for everybody, my husband and myself included.  Hubby and I each have different beneficial foods, and different "trigger" foods (if you will), and grocery shopping is more than a pain, so I try to focus on the foods and food items that are beneficial to both of us.
Greatly shortening the shopping list, using our meter as a gas gauge (see Marty Kendall's site), and intermittent fasting have all helped turn the health tide around here.  Now if only the rest of the world would et the hint...
