Maple & Pecan Fudge Fat Bombs

After over a year working on my brand new cookbook Sweet & Savory Fat Bombs, I'm excited that it has just been released! Thanks to your amazing support and high volume of pre-orders, it's one of the best sellers in low-carb and paleo books on Amazon - thank you all so much! Looking back at my fat bomb cookbook project, creating and testing all the recipes was a lot of fun! I've created many fat bomb recipes, of which over a hundred made it to the book.

Everything came in handy as you can see on the photo below. Apart from my regular photography kit, I came up with some DIY improvements such as the kitchen string to hold one of the reflectors, the lettuce leaves to secure it in place, and a carrier bag filled with dumbbells for counterweight! :-)

Here's how my fridge and freezer looked like when while working on the book cover that required several sweet and savoury recipes for the cover photo. I hate wasting ingredients and luckily, I managed to give most of the fat bombs away. My friends didn't complain :-)

Today, I'd like to share one of my favourites: Maple & Pecan Fudge. I also made a video for you and I hope you like it :-)

Ingredients (makes 16 fat bombs):

Spiced Maple & Pecan Butter:
Maple & Pecan Fudge:

Instructions:

  1. Start by making the Spiced Maple & Pecan Butter. In a food processor, combine the pecans (or walnuts), vanilla, cinnamon, maple extract, and salt.
  2. Process until smooth for a few minutes. Use a spatula to scrape the mixture from the sides if needed.
  3. Add Erythritol and butter (or coconut oil).
  4. Pulse until smooth.
  5. Transfer the dough to an 8 x 8-inch (20 x 20-cm) parchment-lined pan, or a silicone pan. With a spatula, spread the dough evenly into the pan. Add roughly chopped pecans and mix in.
  6. Top with the remaining pecan halves. Refrigerate for 1 to 2 hours, or until set.
  7. Be sure the fudge has set before slicing. Keep refrigerated for up to 1 week or freeze for up to 3 months. Enjoy!

I made this delicious looking fat bomb..but they came out very very soft...not like yours..I even put them in the freezer to see if this would help..not sure what I did wrong?? Hope my next try is better.

I noticed from a few more comments that this happens sometimes and I'm not sure why. I would try using more butter or coconut oil to help it solidify in the fridge. Other than that, it might be the maple extract that is making it too soft (if it contains glycerin). You may want to try skipping it or using less of the extract.

I love your blog and have purchased your book. I made your maple pecan fudge bombs and they are very good however even though I followed your recipe to the tee they came out lighter in color than yours and also did not set up enough that I could cut them into squares. I used swerve as my sugar base. I wondered if you had any ideas on why mine didn't set up. I still eat it but with a spoon..lol

Thank you for your kind words and support Sandra! I'm not sure why that happened. You may want to try using coconut oil or melted cocoa butter instead of dairy butter and let it sit in the fridge for 1-2 hours before cutting. Another thing that may help it get solid is coconut butter (aka coconut manna). The different colour could be caused by nuts (e.g. in case you used walnuts, they are lighter than pecans). I hope this helps!

I have just received your cookbooks in the mail from Amazon. I have been doing Ketogenic diet for about 5-6 weeks now; I started with Maria Emmerich's cookbook but she recommended your cookbook and blog in the back of her book and I have visited your site for info and recipes many times and thus, ordered your cookbook and Fatbombs book. Anyway, I'm very excited to try some sweet recipes out because I have been missing that! But I detest coconut and coconut is a big part of your Fatbombs book--- my question is where you have coconut butter in recipes, can I use ghee or unsalted butter instead?? And what can I use to replace coconut milk powder in the white chocolate recipe? I have found flavorless coconut MCT oil so that's one problem solved lol. Please advise!!! Thanks!

Hi Jessica, thank you for buying my book!
Coconut butter: You can use any nut butter instead of coconut butter - do not use regular butter or ghee. Coconut butter is made from dried blended coconut meat - it is not pure fat like butter or ghee.
Coconut oil: You can use butter or ghee instead of coconut oil.
Coconut milk powder: This is just a guess but you may be able to use vanilla whey protein powder or egg white protein powder instead of coconut milk powder. I haven't tried it and I think you may need to use different amounts. I hope this helps!

I am considering buying your new book but I am allergic to cocoa and was wondering what percentage of recipes in book are chocolate? ....I tend to buy books and then so much of the sweet stuff is chocolate and I can't make use of them.

Hi Jenny, I think that about half of the sweet recipes contain cocoa but you can substitute it with white chocolate in some cases (recipe for white chocolate included). I hope this helps Smile

These look delicious! Although, the maple extract called for in the recipe (and linked to Amazon) contains gluten and soy. Any ideas for a replacement?

I noticed it lists soy but I haven't seen gluten before reading what the "natural flavors" are made of. This is the one I use and I'm not sure if there are better alternatives (at least not in the UK). I found a few more but all list "natural flavors".

I'm so glad to have found you! Ketogenic seems to be the answer for my health issues - to keep them from becoming health "problems".
I guess I'll always prefer a sweet taste to a savory one...but I'm glad to have stevia and other natural but non caloric sweeteners to help make it.
Every recipe I've tried has been wonderful! Thank you for your work  - it makes it easier to stay on the right eating path for me!!!

The savory bomb sounds like a great recipe.  Sweet is always tempting, but the savory can be more satisfying.  I am quite new to the Ketogenic diet, but fine it to be very satisfying-I don't get hungry on this diet.

I like both ^_^ But I have to make them coconut milk free as I don't tolerate it well. Sad part is that it seems like I don't tolerate cream neither. So, my main fatboms are coconut oil on a green tea.

How about nut & seed butters, cocoa butter or ghee? Smile Could it be that guar gum added to many canned coconut milk products causes that? You may want to try Aroy-D that is free of guar gum.

How exciting! I tend to make the sweet fat bombs mostly (although not all that sweet) as they keep longer in the fridge and it seems to be the one thing I don't go overboard on eating. I can't say the same for something like bacon. ;)

I have epilepsy and have a modified ketogenic diet. Fat bombs are a quick and easy way to make sure I'm getting all I need.  I like both sweet and savoury purely because it fits in with my meal plans.

I'm sure these recipes are delicious, but they seem to me to be awfully expensive to make.  4 1/4 cups of pecans would cost nearly $10 where I'm from, plus all the other ingredients.  I also notice you don't mention stevia as a sweetener.  Is there any reason for this?  thanks.

Yes, they can be pricey - maybe you can try walnuts instead? I prefer erythritol but I do use stevia to add sweetness if needed (listed as optional in the ingredients). Too much of it may make recipes bitter, so I only use a small amount of stevia together with erythritol.

I prefer the sweet because I have such a sweet tooth. It makes me feel that I have not given up the taste that I so love. But getting into this WOE I am discovering that the savory is giving my taste buds a real treat too! Enjoying your recipes and looking forward to more weight loss!

Oooooh, these maple & pecan fudge fat bombs sound delish.  I think I messed up my comment for the cookbook entry, but I also think I really prefer savory fat bombs.  I WISH my fridge looked like your cover photo shoot day!! Gurl, I could so deal with reaching in when i need a quick bite and move on.  Not the best about eating real meals, especially sitting down or finding a plate, too many years of not being allowed to eat anything, you know? I still have a sweet tooth, so I'd prefer a sweet bomb, but you've got me thinking!!  Perhaps a vegan cheese pecan bomb would be good for those nights when hubby is all over the cheesy wheat crackers! Or bacon in a bomb?? Mmmm

I feel so guilty eating fat bombs! They are so good and have saved my diet so many times. I get where I have to have something sweet and the bombs do it for me. I continued to lose weight using the fat bombs. Currently I have let the diet slip away, we  did a major move to another state and things have been crazy. Yesterday I did a grocery shopping trip and am trying to get back to proper eating. My husband has lost 50 lbs and is within 15 lbs of his ideal weight. I on the other hand just didn't lose like he did, ate the same food.  I need a fat bomb cookbook. Can't find my notes where I wrote down recipes, don't have home internet as we are renting a short term vacation place, my memory isn't good enough to recall the recipes. Moving is fun but it sucks too!

I'm an awful sugarholic. Diabetes is rampant in my family, except for me.  Also heart disease and cancer.  Perhaps this book could help me reduce, then maintain, where I have utterly bombed elsewhere.

The one I used tastes sweet (Frontier, see the link in ingredients) - but it doesn't contain sugar. It contains glycerin that doesn't spike blood sugar.

This is an awesomw fat bomb cookbook. The savory ones rock. I've already made the Waldorf and the Herbed Cheese ones. Delicious beyond belief😋😋😋😋 the entire book is amazing. Pictures are well done, recipes easy to follow and the results are spectacular! Am having trouble getting my fat in and this is just what I need to help me balance my macros! Yaay!
