Happy Easter everyone! Have you decided what to cook on Monday?

This tender and juicy lamb leg cooked in a slow cooker with herbs and spices is super easy and simple — you'll only need a few common ingredients. Apart from being delicious, lamb is perfect for the keto diet.

This recipe requires a slow cooker or crock pot but you can even use a Dutch oven or you could bake it in the oven on low, covered with a foil, for 3 to 4 hours.

If you have a busy lifestyle, you should consider getting the Instant Pot which does both slow cooking and pressure cooking. It's such a time saver and it's perfect for batch cooking. I use it on a regular basis to cook meat I get from my local farm: lamb, mutton, beef and pork.

A slow cooker is not just convenient but you'll also save money, as it's great for cooking inexpensive yet delicious cuts of meat such as brisket, pork shoulder or oxtail.

Ingredients (makes 4 servings)

  • 1 lamb leg, bone in (about 1.6 kg/ 3.5 lb) - will yield about 50% meat
  • 2 tbsp ghee, tallow or lard (30 ml)
  • 4 cloves garlic
  • 1/4 cup freshly chopped mint or 1-2 tbsp dried mint
  • 6 cups green beans, trimmed (600 g/ 1.3 lb / 21.2 oz)
  • 1/2 tsp sea salt
  • freshly ground black pepper

Instructions

  1. Pre-warm the slow cooker. Using a paper towel, pat dry the lamb and season with salt and pepper. Grease a large pot with ghee. Slow-Cooked Lamb with Mint & Green Beans
  2. Place the lamb in the pot greased with ghee and fry until golden brown. Slow-Cooked Lamb with Mint & Green Beans
  3. Using tongs, turn on the other side and brown from all sides. When done, take off the heat and set aside. Slow-Cooked Lamb with Mint & Green Beans
  4. Peel and slice the garlic and chop the mint. Place the lamb in the slow cooker and sprinkle garlic and mint all over. You shouldn't need any water, however, if the lamb becomes dry, add half to one cup of water. Slow-Cooked Lamb with Mint & Green Beans

Can I use asparagus instead of green beans? I was under the impression green beans were a no no on the Keto diet & my husband is being a strict stickler to every detail! 🙄 l could be wrong, we are new to the thing and the information seems to vary greatly!

Absolutely! Asparagus is a great option too. While legumes like beans, chickpeas or lentils are not suitable for a keto diet, you can use green beans - they are very low in carbs.

Can this be made in a pressure cooker?

Yes you can use a pressure cooker instead! 😊

I think it would cook alot faster too. Bones increase cooking time. Boneless chicken thighs compared to bone-in chicken thighs? About half the time in a regular oven.
Bones make meat taste better. And you can make stock afterward.
It's not that hard to carve the cooked meat with the bone in it. Martha Stewart had a tutorial about carving leg of lamb that I was looking at last nite online 😊

Yes, I prefer bones in too - everything tastes to much better 😊

Can I do it with boneless?

Sure! If you do, use about half the meat weight 😊
