Have you ever tried to make a mug cake? It literally takes just a few minutes to prepare this keto treat packed with healthy fats! I know, some of you don't want to use a microwave or don't have one - for that purpose I included some tips for baking the mug cakes in the oven.

Are Microwaves Safe?

Do we really have to be afraid of any harmful effects? Contrary to what many people believe, most studies show that microwaves don't decrease the nutritional value of foods. This is down to cooking times that are usually shorter and the cooking also requires less water. In fact, every kind of heating and reheating decreases the nutritional value of foods so you should only reheat foods when needed. I personally don't use a microwave every single day but simply when it's more convenient.

Don't have a microwave? If you don't have a microwave, I suggest you make 4-8 servings at once. Preheat the oven to 175 °C/ 350 °F and cook for about 15 minutes or until cooked in the centre.

Tips & Substitutions

You can use 1 tablespoon of coconut flour instead of 2 tablespoons of hazelnut meal and use a dash of hazelnut extract instead. If you don't have coconut flour, you can use 2 tablespoons of finely shredded desiccated coconut instead.

Too "eggy"? Although I like this combination, some of you may perceive it as too "eggy". You can try the following: use one egg, double all the dry ingredients and add 1/4 cup coconut milk, almond milk or cream. This mixture will make 2 mug cakes.

Instead of the listed sweeteners, you can try other healthy low-carb sweeteners from this list.

Can this be made with Monk fruit instead? Would it be the same amount as the erythritol? Thanks!

Yes, you could! You could use any other sweetener (low-carb if you are keto) to taste. Granulated monk fruit based sweeteners may be slightly sweeter than pure erythritol but for 2 tablespoons the difference is negligible so you can swap them the same way.

This mug cake is yummy!  For the liquid stevia I used Better Stevia brand Dark Chocolate.

Hi Lana, I used a ramekin that fits about 3/4 cup so 3/4-1 cup should work 😊

I must be doing this wrong because it's like bitter scrambled eggs with an awful sweetener aftertaste. How bit does the mug need to be for the above measurements?

Which sweetener did you use? Maybe you can skip the stevia and use just Erythritol? You may want to try using one egg, double the dry ingredients and add 1/4 cup of coconut milk and make two mug cakes instead of one? I'm fine with it but some people may perceive it as too "eggy".

Maybe I'm missing it, but I don't see the calorie count, although I know it's not that important to count calories, I'm just curious how many calories this mug cake has.  I tried it again exactly like the recipe, and it satisfies my sweet tooth.  I'm "hooked" on this mug cake.  It's the best I have tried!  Thank you for this delicious creation!!

Bit eggy in texture. Maybe one egg over two or three cakes and a bit of almond milk.

Yes, you can make 2 servings if you add some almond milk or coconut milk. I'd also add some more nut / coconut flour.

Wow, this was more than a snack; it was a filling meal, and really delicious.  Can't wait to make this again, and so easy and quick.  You're a genius!! I didn't have hazelnuts, so I used a combo of pecans and walnuts.  One thing I think I will add next time is a pinch of salt.  I hope that won't spoil the recipe in any way, but I like that sweet and a bit salty taste.  Your site is one of my favorites!  I have the window open all the time and love reading and learning everything.

How easy is that?! I just made it and what a great treat. It took longer to eat it than make it, and not much washing up as it's made in the same dish! Great to have an alternative to almond flour in a muffin. I think this might make it onto the breakfast menu occasionally...!
