Low-Carb Pink Rose Cocktail

Step 1To make the ice cubes, divide about 1/4 cup of the dried rose petals evenly among the ice cube tray, and then cover with water. Place in the freezer until set.

Step 2You can make rose water at home or use ready made rose water. To make the rose water, add the about 1 tablespoon of rose petals and 1/3 cup water to a small saucepan. Cover, and bring to the boil. Reduce to the lowest temperature, and simmer, covered, around 5-10 minutes or until the colour of the rose petals have faded.

Step 3Cool completely. Strain through a nut bag or fine mesh sieve. Store in the refrigerator up to 3 weeks.

Step 4To assemble the cocktail, add the gin, lemon juice, rose water and erythritol to a jug. Stir until combined and the erythritol is dissolved.

Step 5Add 2-3 ice cubs to each glass and pour over the gin mix.

Step 6Top with sparkling water (club soda).

Step 7Serve immediately.
