Keto Avocado Toasts Three Ways


Step 1Prepare the 90-Second Keto Bread or any other low-carb bread (2 recipes make 4 slices as you will be cutting each bread widthwise). Optionally, broil the slices of the bread for a minute or two just before serving.

Step 2Place the avocado, lime juice, olive oil, salt and pepper in a bowl.

Step 3Blitz using an immersion blender or a food processor until smooth.

Step 4Use immediately or store in an airtight container in the fridge for up to 3 days.

Step 5Spread the avocado cream of top of the sliced bread (optionally toasted).

Step 6For Bacon and Rocket (as per ingredients): Fry the bacon (or pancetta) slices in a pan or bake in the oven until crispy. Top 1 slice of Keto Bread with avocado cream, rocket, bacon and sprinkle with black pepper.
For Griddled Zucchini and Feta (see recipe tips above for this option): Slice the zucchini thinly using a vegetable peeler. Heat the olive oil in a griddle pan. On a medium heat fry the zucchini until soft and charred. Top each slice of keto bread with avocado cream, zucchini, feta and chilli flakes.
For Avocado and Sun Dried Tomato (see recipe tips above for this option): Top each slice of keto bread with avocado cream, sun dried tomatoes and chilli flakes.

Step 7Optionally, drizzle with extra virgin olive oil and lime juice. Serve immediately. The bread can be dstored at room temperature for up to 3 days.
