Keto Pumpkin Pie Spiced Waffles


Step 1Crack the eggs into a bowl and whisk them with melted coconut oil, Erythritol and optionally a few drops of stevia.

Step 2Add the pumpkin puree (you can even make your own pumpkin purée) and mix until smooth.

Step 3Pour in the cream (or coconut milk) and mix well.

Step 4Add protein powder, coconut flour, baking soda and pumpkin pie spice mix.

Step 5Preheat the waffle maker, typically, in the closed position. Do not pour the batter in until it's hot. Pour in about 1/4 cup (60 ml) per waffle.

Step 6Close the waffle maker and cook for a minute or two. The exact time depends on the waffle maker.

Step 7Serve on its own or with whipped cream. Store in a sealed container in the fridge for up to 5 days.
