This is my absolute favourite way to make low-carb gravy! I first created this easy keto recipe back in 2015 and since then I fine tuned it to perfection. It's thick and creamy with none of the starches and thickeners found in most gravy recipes.

I use chicken stock or bone broth to make mine but if you have meat drippings from a roast, it's even better! Simply use the drippings and add all the ingredients in this recipe apart from the bone broth into a saucepan. Follow the steps below and only use the bone broth if you need to thin the gravy down.

Ingredients (makes 10 servings, about 2 1/2 cups/ 600 ml)

  • 1/2 cup dried Porcini mushrooms (15 g/ 0.5 oz)
  • 1/2 cup boiling water to soak the mushrooms (120 ml/ 4 fl oz)
  • 1 medium white onion (110 g/ 3.9 oz)
  • 2 cloves garlic
  • 2 tbsp freshly chopped sage and/or rosemary or herbs of choice
  • 2 tbsp ghee or duck fat (30 g/ 1.1 oz)
  • 1 tbsp Worcestershire sauce or balsamic vinegar (15 ml)
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh lemon juice (30 ml)
  • 2 cups bone broth or chicken stock or vegetable stock (480 ml/ 16 fl oz) - you can make your own bone broth
  • sea salt and ground pepper, to taste
  • Optional: 1/4 cup heavy whipping cream or coconut milk (60 ml/ 2 fl oz)

Instructions

  1. Peel and dice the onion and garlic. Roughly chop the herbs. The Best Keto Gravy
  2. Add boiling water to the porcini mushrooms and soak for 30 minutes. Peel and dice the onion and garlic. The Best Keto Gravy
  3. Add the onion into a hot pan greased with ghee and cook over a medium heat until translucent. Add the garlic and chopped herbs and cook for another minute. The Best Keto Gravy
  4. Pour in the bone broth, lemon juice and add the soaked porcini mushrooms including the soaking liquid.
  5. Add Worcestershire sauce (or balsamic vinegar) and mustard and bring to a boil. Lower the heat and let it simmer for about 10 minutes.
  6. Take off the heat. Use an immersion blender or place in a blender to process until smooth and creamy. Season with salt and pepper to taste. The Best Keto Gravy
  7. Depending on how much you reduce the gravy, you'll get 2 1/4 to 3 cups of gravy. If the gravy is too thin, place back on the stove and cook until thickened. If the gravy is too thick, add a few tablespoons of water. You can optionally add 1/4 cup heavy whipping cream or coconut milk. The Best Keto Gravy
  8. When done, serve immediately with meat, roasted vegetables or Creamy Keto Mash or let it cool down and store covered and refrigerated for up to 5 days. Reheat as needed. The Best Keto Gravy

That gravy was out of this world! I only had regular mushrooms so I used them. Added a little more broth. Love worchestshire and Dijon so may have added a titch (🥴) more. Did freeze it and it was perfect. Could eat it every day! Wonder how it tastes over eggs. 😂

Delicious! It was only the two of us so we scaled this down by half and still had plenty for leftovers. This was perfect with bacon wrapped turkey with Brussels sprouts and pigs in blanket. A lovely little Christmas for two.. thank you 😊

That sounds like the perfect holiday menu! Same for us, it was just the two of us plus the cat 😊 I'm baking a whole goose today so I'll use some of the leftover gravy, and there will be plenty of meat to freeze!

Do you think that dried shitake mushrooms would be as good as porcini? I have a lot of dried shitake here

Absolutely! They are not as aromatic as porcini but the gravy will still be delicious.

I didn't have any Dijon or it's from scratch ingredients, so I left it out but followed the rest of the recipe... Mine is very salty... "Salt and pepper to taste"...along with my broth cubes.. too much!! Bone broth would have prevented that.  
But I added more cream and hopefully fixed it.  I like it and the onion and mushroom is SO GOOD!!

I was wondering how Balsamic Vinegar fits in with the Keto Lifestyle? I thought it was out because of all the sugar from the grapes?

That's a good question 😊 Not all foods containing carbs (or even sugar) are necessarily excluded. For example, dark chocolate can be a part of a low-carb diet (and it does contain some sugar). Technically, there are no keto and non-keto foods. What matters more is how many carbs per meal/day you consume. Sad to say I didn’t care for this 😞. Too labor intensive and all I could taste was the vinegar.

I actually added more balsamic vinegar! 😊 I loved it but had to add a splash of water. My ended up being too thick but then I cooked it for longer than I should have so...

I've been looking all over to find a keto friendly gravy to make with my meatloaf tonight and you've given me some terrific ideas. I don't have a few of the ingredients mentioned but it's a start to something. Thanks!

I think that the mushrooms can be skipped if you use more vegetables/aromatics to keep it creamy. I hope you like it! 😊

I'm not 100% sold on this. I think the balsamic and/or Dijon flavour came out too much in it whereas I was expecting a nice meaty flavour. That said, I still enjoyed it, may just halve the Dijon and balsamic next time 😊

Is this freezable? I know u say it lasts a few days in the fridge but where I can I like to double/triple recipes & freeze them as I am keto-ing but not the rest of the family.

I haven't tried to freeze it but I think it should work. You may need to blend it after it's defrost - just my guess 😊

Hi Jess, yes you can use fresh mushrooms too. I prefer porcini mushrooms because they add a lot of flavour. I'd think about 3 cups of fresh mushrooms but I'd have to try to be sure 😊
