Step 2Add the cinnamon, star anise and cloves.
Step 3Bring to a boil, then reduce the heat and simmer gently for 15 to 20 minutes, until the berries are soft and have released their juices.
Step 4Strain the mixture through a fine-mesh sieve, pressing the berries with the back of a spoon to extract as much juice as possible. Discard the solids.
Step 5Pour the strained elderberry juice back into the cleaned saucepan. Add the allulose and lemon juice and stir to combine.
Step 6Bring back to a gentle simmer and cook for about 10 minutes. The cordial should reduce slightly but will still be fairly fluid rather than thick like a traditional syrup.
Step 7Remove from the heat and pour into clean bottles or jars. Let cool, then refrigerate promptly. Store in the fridge for up to 2 weeks, or freeze for longer storage.
Step 8To serve, dilute with still or sparkling water to taste.
