Simple Tomato Salsa (Pico De Gallo)


Step 1Wash the ingredients.

Step 2Finely dice the tomatoes. I prefer using large beef tomatoes because they are typically less watery. Place in a mixing bowl.

Step 3Peel and finely dice the onion and mince the garlic. Halve the chili peppers and remove the ribs and seeds. Finely chop the chili peppers and cilantro or parsley if you don't like cilantro. (I only used the leaves but you can also add finely chopped stalks.)

Step 4Add everything into the mixing bowl. Add the lime juice. Season with salt and pepper.

Step 5Mix until well combined and season more if needed.

Step 6Transfer into a jar and store sealed in the fridge for up to 5 days.

Step 7Serve as a side, over fajitas, as a salad topper, with your breakfast omelet, add to your lunchbox or serve as a dip with keto tortilla chips.
