Low-Carb Crispy Lemon & Herb Chicken Wings

Step 1Preheat the oven to 180 °C/ 355 °F (fan assisted), or 200 °C/ 400 °F (conventional). Pat the chicken wings with kitchen paper to dry. Season with salt and pepper.

Step 2Heat a large cast iron skillet or non stick sauté pan over a medium heat and sear the chicken wings for 2 - 3 minutes per side.

Step 3Transfer to a greaseproof lined baking tray and roast for 30 - 40 minutes until cooked through and slightly crispy.

Step 4Heat the butter in a pan. Add the garlic, lemon juice to taste (start with less lemon and add to taste) and 3 tbsp fresh parsley. Stir for 1 minute. Option to season with salt and pepper. Remove from the heat.

Step 5Pour the sauce over the chicken wings and crisp up under the broiler for 2 - 3 minutes per side. Sprinkle with 1 tbsp fresh parsley and serve immediately.

Step 6These chicken wings can be stored in the fridge for up to 2 days but won’t be as crispy when reheated.
