Low-Carb Chicken Parmesan Skillet

Step 1Preheat top element of oven to 200 °C/ 400 °F (conventional), or 180 °C/ 355 °F (fan assisted).

Step 2Heat olive oil in an ovenproof skillet over medium high heat. Cook the chicken breasts 5 minutes on each side, until golden.

Step 3Pour the marinara sauce over and around the chicken. Sprinkle the cheese over the chicken breasts, and then sprinkle with the herbs.

Step 4Place in the oven and bake 10 to 12 minutes or until the cheese is melted and golden and the chicken breasts are cooked through.

Step 5Serve immediately, optionally with fresh herbs on top. Eat with steamed or roasted low-carb veggies. To store, let it cool down and keep in a sealed container in the fridge for up to 4 days. Reheat before serving.
