Step 1Place the butter in a small saucepan over medium high heat until butter has melted. Add the onion, celery and garlic and cook gently until they are translucent and softened. Pour the beef stock in and bring to the boil.

Step 2Reduce heat to a simmer and add all of the remaining ingredients. Simmer on low for about 15-20 minutes, stirring occasionally.

Step 3Remove the sauce from the heat and allow it to cool until it is hot but not boiling.

Step 4Pour the sauce into a blender or food processor and blitz until very smooth.

Step 5Pour the sauce into a lidded jar and seal immediately. Store in the fridge for up to 2 weeks. For longer storage freeze in an ice tray for up to 6 months.
