Homemade Low-Carb Amaretto

Step 1Add the water, sweeteners and molasses to a small saucepan and heat until just boiling.

Step 2Reduce to a simmer and cook, stirring, until the sugars are dissolved.

Step 3Pour into a 1 L (34 fl oz) capacity jar and mix with the vodka and almond extract. Add the vanilla beans and seal.

Step 4Place in a cool, dark space for at least one week but up to four before enjoying. If you don't have time, use vanilla bean powder and let it infuse for at least an hour. If you use vanilla extract, no infusing is needed.

Step 5Serve at room temperature or over ice.

Step 6Store in a sealed container in a dark, cool cupboard.
