Bell Pepper Sandwich with Smoked Salmon & Avocado

Step 1Slice the avocado. (Note: You can use cucumber if you're not a fan of avocado, or use part avocado, part cucumber.)

Step 2Cut the bell peppers in half and remove the seeds.

Step 3Spread the cream cheese inside each half and then top with everything bagel seasoning. (To make your own, see recipe tips above.)

Step 4Top with smoked salmon and avocado. They can be stored in the fridge for up to a day.

Step 5To pack for lunch for later, press the halves together, wrap and place in an airtight container. When ready to serve, simply separate the halves or cut the whole sandwich in half. (Note that eating bell pepper sandwiches this way can get messy.)
