10 Minute Creamy Tuna with Broccoli

Step 1Place the broccoli in a steamer or a pot filled with boiling water. Cook for 4 minutes (crisp tender) or op to 7 minutes (tender). Remove from the pot heat and set aside covered to keep warm.

Step 2Meanwhile, place the capers on a sheet of paper towel and press to remove moisture. Roughly chop.

Step 3Grease a saucepan with 1 tablespoon of olive oil and heat over medium heat. Add the garlic and capers and cook, stirring a minute or so until fragrant.

Step 4Reduce heat and pour in the cream. Stir and add tuna.

Step 5Break up the tuna with the back of a spoon and stir through. Simmer for 2 to 3 minutes.

Step 6Remove from heat, and season with salt and pepper, and fresh lemon juice to taste.

Step 7Serve spooned over the steamed broccoli and drizzle with the remaining 2 tablespoons of olive oil. Eat immediately or store in a sealed container in the fridge for up to 3 days. Reheat before serving.
