It's no news that the ketogenic diet has numerous health benefits. Apart from weight management, the ketogenic approach can be used to treat health conditions such as diabetes, epilepsy, and even cancer.

This week I had the rare opportunity to review a fantastic cookbook, The Ketogenic Kitchen written by Domini Kemp and Patricia Daly. Domini is a food writer and restaurateur, and Patricia is a nutritional therapist who runs two popular websites ParticiaDaly.com and KetoForYou.com. Patricia was also one of the experts at the Keto Summit and her talk "Cancer: A Practical Approach for Preventing and Healing with Keto" is one of the must-watch interviews.

This book is full of delicious recipes that are quick and easy to prepare with few ingredients - and the photos are mouthwatering! All recipes are low-carb and most are ketogenic and paleo/ primal.

Who Is This Book For

The first part of the book by Domini is suitable for those who follow a low-carb approach, while the second part by Patricia is ideal for those who follow a ketogenic (i.e. very low-carb) diet. Apart from recipes, this book also includes well-researched tips and easy-to-follow diet plans that are perfect for those who are new to the diet.

Today I'm sharing one of the many amazing recipes from The Ketogenic Kitchen: Kale Crackers! The ingredient I was most excited about in this recipe are Brazil nuts. There is no better dietary source of selenium which is essential for thyroid health and great for those with thyroid issues, like me! These keto crackers are crispy and taste great, especially with low-carb toppings such as:

These crackers are fabulous with pestos, pâtés, guacamole and all kinds of spreads. We know for a fact that most people wouldn’t go far without bread and crackers, which is why you’ll find several recipes for them throughout the book. These crackers can be frozen, but they also keep for at least five days in an airtight container.

Ingredients (makes about 28 crackers)

Note: You can make your own Chinese five spice blend. Simply mix equal parts of ground cinnamon, ground cloves, fennel seed powder, star anise powder and Szechwan peppercorn powder.

Instructions

  1. Preheat the oven to 150 °C/ 300 °F. Line a baking tray with nonstick baking paper. I used strong baking paper lined with aluminium foil on one side that won't stick or tear. Crunchy Low-Carb Kale Crackers
  2. Put the kale leaves into a food processor and process until finely chopped. Add the remaining ingredients. Crunchy Low-Carb Kale Crackers
  3. Process again to a smooth paste. Using a spatula, spread the paste onto the lined tray as thinly as possible. Crunchy Low-Carb Kale Crackers
  4. Bake for 55–70 minutes, depending on how crunchy you like the crackers. Allow to cool down, then break them into pieces by hand or using a pizza cutter.
    I wanted to make the crackers extra thin and used 1 1/2 baking sheets and made 28 crackers (instead of 20 crackers).

What do you sub for the eggs ?

You could try chia eggs or flax eggs (1 egg = 1 tbsp ground flax or chia plus 3 tablespoons of water). This will make the dough more sticky.

Hi there, I am just wonder how these awesome crackers last for, do you have to refrigerate them as well?

I kept mine at room temperature (in an airtight container) for about 5 days until we ate them all but I think you can keep them for up to 2 weeks.

My husband and I started following a keto diet in January interspersed with paleo.  It was not for weight loss or control but to see if the lack of carbs would starve my husbands prostate cancer cells and lower the PSA count. He opted out of radiation and is using hormone deprevation and the keto diet as well as exercise. I remain the head chef, so am constantly planning appropriate keto meals to stay on task. Your book looks delicious and inspiring.   Sylvia

Eating this way gives me a clarity and stamina I had only previously dreamed of. I no longer need will power, just knowing the facts and applying them diligently, I simply feel fabulous. I feel it is the way for me to live my life in full, engaging with the world and people, rather than getting lost and hiding away in small indulgences.

I need to lose a lot of weight, and I think the keto diet would be great for my health too (and my mom and kids too).  I am insulin resistant and every time I have any carbs (even just one cracker) I feel extremely tired afterwards and either need a nap, or am useless for the rest of the day.  I really need to take action now, and the cookbook will help me with awesome recipes to make for myself and my family.  My mom has osteo-arthritis and she feels less pain when eating keto, although I've run out of recipe ideas, and eating the same thing almost every day makes it difficult to follow an eating plan, so the cookbook will help there in a big way 😊

I would love to have a copy of this cookbook as I have stage 4 breast cancer and am using the keto diet to help kill cancer cells.  I'm also not eating dairy or red meat so I have less choices of food.  I've been looking for a good cracker recipe in the last couple of weeks and this might fill the bill.  I still have kale in the garden.

I have just re-started following a keto diet in order to control my blood sugar (I have type 1 diabetes) and to see if it helps with my symptoms of Hashimoto's. I was inspired to try again due to Martina having Hashimoto's herself. An added bonus is I've lost 5lbs in a week!

I strive to follow keto for weight loss, less hunger, no sugar cravings, awesome skin, and mood stabilization.

My triglycerides went from 186 down to 93! Also, I am making these krackers😋 right now. I used course black pepper and garlic powder instead of five spice. Thank you for all the wonderful recipes!!!

Through the Keto way of eating I've been able to lower my A1C's into a much healthier range and so far have lost 24 lbs.
