These low-carb truffles are so easy to make and just as delicious as chocolate chip cookies. They are high in healthy fats and low in carbs, just like my other fat bomb recipes. The main ingredient is toasted almond butter that gives these guilt-free treats their characteristic cookie dough flavour. If you can't eat nuts, you can use sunflower butter instead - they will be equally delicious!

Instead of almond butter, you can use any preferred nut or seed butter - here are some homemade options you can try.

Instructions:

  1. In a bowl, mix the almond butter, walnuts (or pecans), powdered Erythritol, cinnamon (or vanilla powder), salt and chopped dark chocolate. |Keto Cookie Dough Truffles
  2. Gradually add the coconut flour and mix until well combined. Place the dough in the fridge for 1 hour. |Keto Cookie Dough Truffles
  3. After an hour, remove from the fridge. Use your hands to form 16 truffles and place them on a tray. Transfer into the freezer for 1 hour. |Keto Cookie Dough Truffles
  4. Meanwhile, melt the dark chocolate and cacao butter in a double boiler or a glass bowl on top of a small saucepan filled with a cup of water over a medium heat. Once completely melted, remove from the heat and set aside to cool down. The chocolate should not be hot when you use it for coating. |Keto Cookie Dough Truffles
  5. Remove the cookie dough truffles from the freezer. To cover them in chocolate, use a wooden stick or a fork. Pick up one truffle at a time and hold over the bowl of melted chocolate. Spoon the chocolate over the truffle until well-coated. Keep turning until the chocolate is solidified. If you have any leftover chocolate, drizzle it over the truffles. |Keto Cookie Dough Truffles
  6. Place each of the coated truffles on a tray lined with greaseproof paper and place in the fridge for at least 15 minutes before serving. |Keto Cookie Dough Truffles

What is the purpose for the coconut flour?  Can it be eliminated with no loss of flavor and less carbs?  Thank you

I use it to reduce the moisture and make it more doughy. You could use almond flour instead but you'll need to use more of it because it's not as absorbent as coconut flour. If you use more almond flour, then you will end up with more truffles and may need to use more chocolate to cover them.

Looks delish. Can you omit choc coating? Does this save a fee carbs?

Yes you can Smile When you keep them refrigerated, they will hold their shape. Or you can use the mixture as nut butter and keep it outside the fridge. The effect on carbs will be small (without coating).

Hi, a quick question, I assume I can swap out the walnuts/pecans for either other nuts or something else?

Absolutely! Just be aware cashew nuts and pistachios have more carbs than macadamias, almonds, etc.
