Autumn is here and it's the best time for pumpkin recipes. So what is it that gives pumpkin treats their characteristic taste?

Although pumpkin itself adds a subtle sweetness and helps maintain a soft texture, it's the spices that make pumpkin treats so irresistible. I like making my own blend so I can choose the spices and flavours I like.

Ingredients (makes about 1/2 cup)

  • 1/4 cup cinnamon (31 g/ 1.1 oz)
  • 2 tbsp ground ginger (10 g/ 0.4 oz)
  • 2 tsp ground nutmeg (5 g/ 0.2 oz)
  • 1 tsp ground cloves
  • 1 tsp ground allspice
  • Optional but highly recommended: 1/2 tsp ground cardamom + 1/2 tsp ground mace

Instructions

  1. Mix all the ingredients and place in an airtight container. You can optionally add 1/2 tsp ground cardamom + 1/2 tsp ground mace.
  2. Store at room temperature in a sealed container.

Hello Martina,
Quick question, can I omit the nutmeg? Will it be a HUGE difference in flavour? Where I currently live, I cannot get this particular spice.

Absolutely! You can omit it and just use any of the other spices instead. I would try 1/2 tsp more cloves, 1/2 tsp more allspice, 1/2 tsp more cinnamon and 1/2 tsp more ginger, but you can just use more cinnamon 😊

Delicious! I originally made a is blend for your pumpkin & orange cheesecake recipe.  I’ve recently shifted to black tea in the morning rather than my usual cup of joe and upon stumbling on this spice blend in the cupboard while looking for something else, was inspired to add some of this spice blend to my morning tea.  I’ve used it every morning since to elevate my black tea/earl gray blend to a caffeinated earl chai tea (add some coconut milk and stevia and voilà!) I just finished the last bit up this morning and came immediately back to this recipe to make more.
