Everybody loves burgers. Making this popular comfort food compatible with a keto diet starts with the buns. It took me several attempts to finally make a bun that is fluffy and tastes just like bread. Feel free to use any fillings to re-create your favourite burger recipe. I used a simple slaw to serve with mine.

Here are some of my favourite burger fillings:

  • ham & cheese
  • crunchy BLT
  • tuna with mayo and onion
  • slow-cooked meat with mayo / soured cream dressing
  • crispy bacon & avocado

Note: Due to the psyllium (high fibre content), make sure you drink plenty of water with these keto burger buns!

Ingredients (makes 4 servings)

Burger Patties:
  • 1 lb ground beef, ideally grass-fed (450 g/ 15.9 oz)
  • 1 tsp Dijon or wholegrain mustard (you can make your own)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp ghee (30 g/ 1.1 oz)
  • 1/2 tsp sea salt, or to taste
  • freshly ground black pepper

Instructions

  1. Make the Ultimate Keto Buns and Easy Russian Slaw. Mix the ground beef with the mustard, garlic powder, onion powder, salt and pepper. Create small, palm-size burgers. Keto Burger with Russian Slaw
  2. Preheat a large pan greased with ghee and add the burgers once hot. Turn the heat down to medium and cook on each side for 3-4 minutes. Do not turn the meat too soon or it will stick to the pan. Use a spatula to lightly press the burgers down while cooking. Keto Burger with Russian Slaw
  3. When done, set aside. Mix the mayonnaise with the Sriracha sauce. Keto Burger with Russian Slaw
  4. Cut the keto buns in half.

  5. Place each half, cut side down on a hot griddle pan and cook for 2-3 minutes until crispy. Keto Burger with Russian Slaw
  6. Start assembling the burgers by adding a tablespoon to the mayo mixture on each of the keto bun halves. Top with meat and slaw. Serve the remaining slaw aside. Keto Burger with Russian Slaw

What is the keto bread? Where can I find it? How many carbs?

It is listed in the "Serve with" option (see the link) - the nutrition facts include the bread buns. I hope this helps!

Hi, just starting Keto and this website is great !  Is it okay to make extra burgers, cook them, freeze them, then quickly reheat / recook in a frying pan ?  If yes - would you know how long they are okay in freezer (a couple of weeks ?)

Hi Adam, yes I think that's fine - you can keep them frozen for up to 3 months 😊

Is the slaw inculded in the macros?

Yes it is (buns, meat + slaw) 😊

Does the carb / pro / fat count include the buns? I plan to make just the burgers alone.

Hi Martin, yes it does. Unless it says "Optional", it's included in the nutrition facts.

I always see Psyllium Husk in recipes. I never heard about it (before keto) and, after some online research, I think it will be very hard to find in Brazil. Is there any substitute?

Hi Bruno, I'm afraid there is no good substitute for psyllium husks / psyllium husk powder. Most low-carb "flours" (almond, coconut, etc.) can be substituted but not psyllium. I did some Google search and found a few suppliers in Brazil so I think you will be able to find some online 😊

Never thought to put roasted tomatoes into a salad, but of course it goes so well with the roasted squash. I added roasted beets since I had some. Don’t have pine nuts; subbed pecans. For the dressing, I didn’t have orange/juice and the stores don’t yet have frozen or fresh cranberries, so I reconstituted dried with hot water. Made my own balsamic dressing with a bit of Dijon mustard. Added strips of grilled tempeh (I’m really not obsessed with protein, but just wanted to use it up).

Love your keto buns! Have to try this recipe. I've been following keto and your blog for more than a year and I'm loving all the effort you put in your app! Thanks for all your work 😊
