This spicy Mexican-style dish is keto-friendly, quick and you will only need to use a few common ingredients. It's perfect for batch cooking too.

We are keeping it keto so there is no rice or other grains used in this recipe. All you need is a bowl of Cauli-rice. I used Spanish cured chorizo but you can use raw Mexican chorizo, or even Italian pepperoni if you prefer that. Chorizo adds a delicious flavour boost, so you won't need any additional spices.

Ingredients (makes 4 servings)

  • 1/2 medium cauliflower (600 g/ 1.3 lb)
  • 2 Spanish chorizo sausages or Mexican chorizo (240 g/ 8.5 oz)
  • 6 jalapeño peppers, slices (80 g/ 2.8 oz)
  • 4 tbsp freshly chopped parsley or cilantro
  • 2 tbsp ghee or virgin coconut oil (30 g/ 1.1 oz)
  • salt and pepper, to taste

Instructions

  1. Prepare the Cauli-rice as described here. Don't cook it - only grate the cauliflower. Keto Mexican Rice with Chorizo
  2. Slice the chorizo and slice and deseed the jalapeño peppers. You can use any other type of mildly hot peppers. Keto Mexican Rice with Chorizo
  3. Grease a skillet with the cooking fat and add the peppers and chorizo. Cook until slightly browned and stir once or twice. Keto Mexican Rice with Chorizo
  4. Add the cauli-rice and cook for 5-10 minutes depending on how tender you prefer the "rice" to be. Taste before seasoning with salt - the sausage will release its savoury juices and you may not need to use any. Add finely chopped parsley. Keto Mexican Rice with Chorizo
  5. When done, take off heat and enjoy warm. Store in the fridge for up to 4 days. Keto Mexican Rice with Chorizo

I just made this with chorizo. I didn't have as much Cauliflower as called for but I scooped it into lettuce leaves and put a few avocado slices on top and it was delicious!  Thank you

I'm new to the KetoDiet concept and practice and I'm still doing my research before I embark upon this new lifestyle soon because I want to know the pros and cons etc. I was going through some recipes and find this information extremely helpful (so thank you!) but I have a few questions. Given that I'm currently based in India, it's a little hard to find a bunch of things used in recipes like the Ultimate Keto Bun etc. The Cauli-rice, however, I think I can manage without extravagant spending on exotic foods. Chorizo sausage isn't widely available here in India so I wonder if I could replace it with another meat without affecting the net carb count substantially. What would you suggest? Thanks for your meticulous approach to information 😊

I think you can use a different type of sausage - the net carbs will be the same. I actually tried ground pork in this recipe instead, added some chili powder and herbs and it was great. Meat should be zero-carb unless there is added flour or sugar in it.

Just tried this recipe and it tasted absolutely great!! Thank you. One thing I am wondering is (apologies for my lack of knowledge on the subject) I thought we were to avoid saturated fats and the chorizo sausage is high in saturated fat? Apologies if it's an easy answer.

What others things cover up the cauliflower taste in the "rice"? While I do like cauli-rice, I do get sick of the cauli-flavor. Thanx!
